Slice cheese in stick form by cutting in a large chunck. Then cut in half and half again until you have the size sticks you want. Then dip the cheese in an egg wash and cover in breadcrumb. This is the important part put them in the freezer for about on hour ( I leave them in as long as possible). Then fry in oil either in a skillet or a deep fryer.

Other answers... No, no, no...... To bread anything and like the restaurant ones you are thinking of. Dreg the sticks in flour and shake them off. Dip them in eggwash (beaten eggs with a bit of water added to thin). Dip them in the flour again making sure there are no wet spots. Then drop them in hot oil. This is how you make chicken fingers as well. Forget the breadcrumbs, batters and all of that though you could do that

Cut the cheese into sticks. Let them get room temp. Roll them in a batter like for hushpuppies or fish cornmeal based batter etc. Shove stick in them, then freeze . get the old fry daddy out and fry them till they are brown.

if you really want them homemade, then you need to take that big block of mozzerella and cut it into sticks. then you need to coat the thing in bread crumbs, preferably with italian seasoning. then put them in a fryer set to 350 degrees for about 5 minutes or so.careful when removing them, they will be hot.
