An alkaline is a base, and salt is not a base. Baking soda is a base.

The only fruits that are acidic are citrus fruits, like lemons and oranges. They have citric acid. Put baking soda on a lemon and see what happens (don't eat it).

Salt, regardless of the acidity of the fruit, promotes osmosis. It pulls the water out of the fruit, and with that water comes the fructose, or sugar.

It only tastes relatively sweeter. I doubt the salt is on it long enough to cause it to be juicier than w/o the salt. Most ppl salt each bite right before they eat it!
