I have a mat with thinner bamboo and one with thicker....the thicker one has one side that is flat. Which one should I use....and if I use the thicker one, the the nori get placed on the rounded side or the flat side?

We are from the US and I am working on assignment in AUS for a LARGE computer mfg, just guess. Anyway, I miss Cherry Pie and the pie filling I have found here in AUS is not up to Wilderness. Is there another pie filling company here in AUS with similar product quality to make a cherry pie?

i know that pierogi are dumplings so, i don't want to put pasta sauce on them. what can i use to top it? (i don't eat meat)
also, i bought the frozen ones. is there any way to cook them other than boiling? i had fried pierogi and those were good but i think they have to be fresh, right?

I'm making Rachael Ray's "Ravioli Lasagna" tonight to bake it and serve it tomorrow night. The recipe says to cook the ravioli for 6 mins. before assembling. Can I use frozen ravioli if I'm assembling it tonight and putting it in the fridge for tomorrow or should I go ahead and cook the ravioli? I'm pretty sure it would be ok since I'm not baking it until 4:30 tomorrow. What do you think. Serious answers only please. I'm holiday stressed enough as it is!
