I have a mat with thinner bamboo and one with thicker....the thicker one has one side that is flat. Which one should I use....and if I use the thicker one, the the nori get placed on the rounded side or the flat side?

Use the one with thinner bamboo and slip it into a gallon size zip lock - way easier than the plastic wrap and easier to grip too. Place the Nori shinny side down for the prettier presentation. Good Luck!

Both should work, and after you use them a couple times you will probably find a preference. The most important thing is that the cling wrap around the roller is good and tight. If I was using the thicker one, I would probably try the flat side, but depending on how large the thing is, the person above me might be right about it being a placemat.

Thinner bamboo. Rolls better. The one with the flat bamboo sounds like a placemat.
