Everyone likes chicken, so you could make that the entree. Use your favorite recipe to prepare it. Make a starch to go with it, like potatoes or rice. Then put together a big tossed salad and have a couple of dressing choices. For dessert, cut corners and pick up a cake or pie from the bakery.
A great chicken recipe that my family loves:
Chicken breasts (boneless)
butter
Italian bread crumbs
Parmesan cheese
Salt and pepper
Mix equal parts bread crumbs and grated parmesan cheese and some salt and pepper. Melt butter and dip breast into it, then coat with bread crumbs. Lay in baking dish that has been greased. Pour remaining butter over top of chicken and bake for 40 - 50 minutes at 350.
This is a delicious recipe and so easy.

Chicken Fetticine Alfredo:
2 boxes pre-cooked Tyson chicken fajita strips (frozen section at walmart)
1 pkg fetticini noodles
3 jars Ragu's Alfredo Sauce
1 can Rotel
Put a little oil in a skillet. Put frozen chicken in the skillet. Cook chicken according to the directions on the box. It only takes about 5 minutes. Drain the chicken. Add 1 1/2 jars alfredo sauce to the chicken. Drain the rotel and put half the can in with the chicken/alfredo sauce. Put on medium heat until hot, stirring occasionally. Boil pasta until cooked. Drain. Pour the rest of the alfredo sauce in with the noodles. Put the remaining Rotel in with the sauce and noodles. Heat, eat, and enjoy.

Bell Pepper Casserole
6 large bell peppers
2-3 pods crushed garlic (2 Tablespoons minced)
3 ribs celery, diced.
1 large onion, diced.
1 tsp Tony's seasoning (or any cajun seasoning, if you cant find that, mix salt, pepper, and cayenne pepper evenly and take a teaspoon of that.)
1/4 teaspoon cayenne pepper
2 cans Rotel tomatoes
2 cups cooked rice
1 can cream of chicken soup
3 lbs ground beef
1 c grated parmesan cheese (optional)
Brown beef in skillet, drain. In large pot, saute veggies with seasonings and Rotel. Add cooked beef and can of soup and simmer for about 10 minutes. Add the cooked rice to absorb some of the liquid. Pour into 11 x 15 baking dish. If using cheese, sprinkle on top. Bake about 20 minutes at 350 F or until cheese browns.

Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

RIGATONI AND HAM BAKE
3 c. rigatoni
2 c. diced cooked ham
1 c. shredded Cheddar cheese
1 jar 4 cheese alfredo sauce
1/2 cup milk
1/2 c. crushed ritz crackers
butter
Heat oven to 350 degrees. Boil water (2 quart) in a large deep pot with 2 teaspoons salt and 1 tablespoon oil (to prevent boiling over). Add rigatoni noodles, stir to separate. Cook uncovered until water comes to a full rolling boil for 10-11 minutes, stir occasionally. Drain and rinse under hot water. In a large bowl, combine cooked rigatoni, ham and 1 cup cheese. In a medium saucepan, mix milk with alfredo sauce. Combine sauce with rigatoni mixture. Turn into 2 quart casserole. Sprinkle with ritz crackers and dot with butter. Bake at 350 degrees for 25-30 minutes.

This is a favorite recipe of mine.
Italian Meat Balls
1 lb. ground beef
1 small can evaporated milk
1 cup quick cooking oats
1 egg
1/2 cup chopped onions
1/8 tsp. garlic powder
1/4 tsp. pepper
1/2 Tbsp. chili powder
Mix preceding ingredients. Make into balls and put in casserole dish, then make sauce:
Sauce:
2 cups catsup
1 cup brown sugar
1/2 tsp. garlic salt
1 Tbsp. liquid smoke or worcestershire csauce
Mix all this and pour over meat balls. Bake at 350 degrees for 45 minutes.
I serve this with mashed potatoes and a vegetable.

Another chicken breast recipe with slight variation.
Skinless, boneless breasts
Pound flat to about 1/4 inch
Dip in melted garlic butter
Then coat with bread crumbs mixed with grated cheddar cheese and parsely
Put in 375 degree oven for about 20 minutes.
Serve with rice and green salad.

Get several breasts of boneless skinless chicken. Get some mayonnaise, parmasean cheese and some bread crumbs (lemon juice is optional) mix the cheese and mayonnaise in a bowl (with the juice if you choose) spread it on the chicken. Sprinke the bread crumbs on that and bake it at 425 degrees for 20 min.

quickest is chicken curry with chopped chicken breast. Open a can of curry sauce pour over chicken add some garlic and squeese a little lemon juice over. cook as per instructions on can .Serve on bed of rice and side salad
