Just looking for basic ways to prepare chicken, and what seasonings to go along with it. I baked some chicken in the oven recently(for the 1st time), with lemon pepper/olive oil/garlic salt, and DAMN was it good lol. I'm proud of myself, so I want to learn more now!! Cooking is fun. :-) Thanks

I have grown so sick and tired of every time I try a new recipe it tells me that I need yet another spice or seasoning that I need but do not have, resulting in me making a trip to the store for one lousy item. I try my best to preview new recipes so I can add necessary items to my list before I go shopping, but for some reason I always end up with a bunch of new recipes after I go shopping. Anyway, the problem is that I am living on my own for the first time, so I'm just now building up my collection of spices. I'd like to know what I should always have on hand. Also, if anyone knows a good site to get new recipes, or have some of their own they would like to share that would be great!! (That collection is just getting started too.) Thank you in advance everyone!! :)

I cooked pork chops tonight and the recipe said to sear the pork chops and then place them in foil. What about the liver disease that manifests itself in uncooked pork, am I to feed that to my family and wish them good bye in morbid and painful death?

How do I fix tomato sauce that is too watery? I know that I drain the pasta long enough so its clearly the sauce that is causing the problem. If the pasta with the sauce on top sits for more then about a minute on a plate a significant pool of red watery sauce starts to pool at the bottom of the bowl...while the sauce at the top of the bowl stays thick. Anyone have any tricks ideas?

This might sound odd, but I was recently given a very nice large slice of ham as a gift (!) by a friend who is friends with an organic butcher. It's big--I'd say about 12 ounces or so, though the weight isn't marked on the package. I thought I could use about half in a soup, either split pea or lentil...? But the recipes that I have use bacon, not ham.

And what do I do with the other half? Please, I don't want a link, I want your personal tried-and-true recipe(s). Thanks!!

ok, this may sound like a really stupid question, but I have never set up a charcoal grill. We're planning a barbeque at a park tomorrow and I'll be cooking on the grills there. What are the steps to set up a charcoal grill?

we raise our own chickens and want to seal in those juices but we need to know the best way. most people would say brine the chicken. i called my butcher and he said to brine them for three days. what is the best solution for brineing the chickens we have about 65 birds. or would pasteing them with some type of oil work better. we grill out alot. we would be vaccum sealing and freezing the rest. we need something that seals the juices, great cooking, and will freeze well. any ideas?

I've baked cheesecake from scratch, but they sometimes come out with a split down the center. I cover the bottom of the pan with tin foil and set it in water to bake, adjusted the temp. let it cool on the counter and not remove the outer part of the spring form pan until cooled. What else can I try?

Functions of yeast and baking soda are similar i.e. to raise the flour or dough. So we should be able to use either one to make a bread or cake. But you never find bread made with baking soda and a cake made with yeast.

I want to make some pasta salad, the kind with the swirly tri-colored pasta. I don't really know how though, and I figured I'd have someone recommend me a good recipe rather than just trying some random one I find online.

I'd like to put some extra virgin olive oil in it for the health benefits. And I don't like many vegetables besides carrots and brocolli (I hate olives). So what do you think?
