I'm not too keen on mince pies, i'd like something else to snack on, maybe something with cinnamon, nutmeg, cloves etc. Any ideas?

I order "seared" ahi tuna last night at a resturant. It was cooked on the outside, but pink, almost raw on the inside. I put the leftovers in the fridge and then ate it more than 24 hours later. I have always heard that you shouldn't let let things thaw and then re-refrigate them. Doesn't this fall into that category. It was warmed, but not completely cooked, then saved. Is this still safe to eat?

Feeling woozy ... somebody call 911 ... wait, maybe thats just the sake ...

I've been trying to make fudge, truffles, everything under the sun having to do with chocolate lately, but whenever i melt chocolate and then add ANYTHING to it, it siezes up and i can't fix it! I've tried cooling the chocolate, heating the milk (or whatever im pouring in), taking the chocolate off the heat before it's fully melted, pouring the chocolate onto whatever else i'm using in the recipe, you name it! I'm sick of having to throw out good chocolate, batch after batch!!!!! what can i do?

P.S. I live at elevation 6200, does that change anything?

Is glass pyrex good for this?
