We make it with strawberries.
Buy tinned strawberries in natural juice, Lyons swiss roll with jam (no cream or buttercream), M&S creme anglais, double or whipping cream and fresh strawberries.
Slice the swiss roll and place in the bottom of the trifle dish. Place the drained strawberries on top and mash them slightly into the swiss roll. Add strained juice so that it is absorbed but not too mushy. At this point add sherry if you desire.
Pour the creme anglais on top and spread to completely seal the layer below. Whip the cream and place on top completely sealing the layer below. Just before serving place freshly sliced strawberries on top. You can crystallise them with sugar by dipping the ends into water and then caster sugar to make them sparkly.
We've been having this variation for 13 years. Delicious!

we do it black forest gateau style... so chocolate swiss roll, black cherries in kirschy jelly, and the top with custard and whipped cream as normal with chocolate curls all over the top.
