Pirogi.
Either make some white dough bread or if you do not have the time buy some ready made puff pastry and defrost.
While it is defrosting finely dice some speck or smoked bacon lardons with finely chopped onion and caraway seeds and freshly ground black pepper. No salt - the bacon is very salty.
While it is frying you may need to drain it a couple of times to prevent meat from just boiling.
A vegetarian filling would be mushrooms and do the rest the same and perhaps add some mushroom ketchup or worcestershire sauce for more flavour and cook till no liquid left - or drain and allow to dry. Add some cheese grated when the rest of the mixture is cold.
Roll out the dough or pastry. Cut circles out, put a small amount of either filling into the centre and fold over and seal the seams well bending in to a crescent shape.
Place on baking tray, allow to rest for a couple of minutes - seam side down. The idea is to keep the package enclosed. Brush with beaten egg and sprinkle with caraway seeds and bake for approx 20 minutes until risen.
The dough type (original) will freeze well and once de-frosted heat through until piping hot.
Enjoy. They take a bit of doing but they are worth it.
For a sweet alternative simply roll out the dough into a rectangle. Add sliced apple in over lapping layers leaving an inch or so round the edge and sprinkle with brown sugar and cinammon. Brush the edges with beaten egg and place in oven at 180 degrees for about 20 mins. Called Abolkuks in Latvian.
I do not see why these could not be made into pirogi either. Just make sure the apple mixture is well drained - you do not want soggy pastry or dough.

"Empanaditas"! They are small hand held treats that resemble calzones. My mom fills them with mince meat, or pumpkin pie filling, or any pie filling she has available, then she bakes them or deep fries. Yummy!
