I keep trying to make oatmeal choco-chip cookies that are soft & chewy, but they keep falling apart. They are soft and chewy, but if you pick them up, they fall all over the place.

I"m using a standard toll-house recipe... I've tried butter, margarine, and then a combination of the two.... I follow the directions perfectly; make sure I beat the butter and sugars and eggs thoroughly.... I even have chilled the batter before cooking them (it made them a little crispier, but still fall apart).

Nothing seems to make them "perfect" (although they taste good). I'd like to be able to hold my cookies without them falling all over the place!

Do you mix them in your recipe? Sprinkle them on top? Eat them alone? How?

My bamboo steamer has a little mold around one of the top edges. Is there a way to clean it, or should I just throw it out?

I just upgraded from a small charcoal to a large gas grill. I pretty much stuck with burgers until now. I'd like to try different kinds of meat, veggies, etc. Have you found a helpful (English) cookbook for a relative beginner?

Maytag Natural White Cheddar Cheese is a unique cheese. Just how unique, I do not know. But, it's called for in several recipes by name. By the "Nutrition Facts", I mean the panel on the side of a product that's required by the FDA. I really do want this particular brand. I found it once on the internet at the Maytag Farm site, but it isn't there, any more.

I've started baking my own bread. Being new to it I still follow the recipes religiously. Loaves come out great, but rolls are always a bit underdone and doughy. Is it better to keep the same temperature and bake for longer, or turn the oven up for the same length of time?

I have a kitchen's worth of spices at least five years old. They still smell and taste OK, just wondering when to throw them out and get fresh ones.
