also do you just use water as you base liquid? I"m fixen on a trip to the store soon today but I would like to make a GOOD pot of beans tonight.

The best ingrediants to put in any type of beans would be a bay leaf or two, some chopped onions, just a pinch of chopped bell peppers, a dash of parsley flakes, some salt and pepper but you can add more seasons to your satisfactory taste. After letting your water and beans boil, add some scoops of butter to make your water base just a lil bit thicker. The thicker you want your beans, the more butter you add.

I would put an onion whole so I can take it out later and some blackpepper and 2 tsp of vinegar.. Thats it. Yes water is what should be used for the base because the flavor from hamhocks is great.

You've already heard the usual onion, bay leaf, etc. Add some collard greens or radiccio for a peppery counterpoint to the smooth flavor and texture of the beans. They will need to boil for about 20 minutes.
