Chili
I brown 1-2 pounds ground hamburger with chopped onion. Drain, and add 1- 14oz can diced tomatoes, and 1-2 tablespoons chili powder. I usually add more to taste. Chili powder will not make it exceptionally spicy, if you want some heat add some ground red pepper or jalapenoes if you prefer. Fresh, diced jalapenoes are better than the jarred or canned IMO. Add a 1/2 cup ketchup or tomato sauce or puree to add a little tomato to the base sauce. Simmer on low heat to let the flavors combine. Season with salt last to taste. You can really add any seasoning to taste, I add onion powder also.

1 lb ground beef
1/2 med. onion, chopped
2 cans dark red kidney beans, drained
1 large can tomato juice
1 can tomato sauce
2 cans diced tomatoes
1 package of chili seasoning (any brand)
Brown ground beef and onion. Drain. In large pot combine, tomato juice, tomato sauce, tomatoes, beans, chili seasoning, and ground beef. Stir to mix well. Simmer 30-45 minutes.
(For hotter chili, my aunt will substitute a can of ro-tel for a can of the tomatoes).
