I know you chop off the head, how do you scale it, and what are the steps? Costco has a great deal on Rainbow Trout. They are huge but with the heads still on which intimidates me. Rainbow Trout is my favorite. However, I don't know what to do before I get them into the oven to bake them.

How do you make a REAL Banana Nut Cake not from the box? Growing up, I have always relied on the boxes and have always made great treats that people in my elementary classes would always appreciate. Now that I am a grown man living on my own. Id like to start learning how to make things on my own. Any sites or references to suggest? I would appreciate it!!!

What meats can be marinaded the longest? When I marinade for 48 to 72 hours with Chicken, its usually with the same ginger dressing from Japanese American style steakhouses that they give you with your salad. Its good! Thanks!!!!!!!!!!!!!!!!!!

I would like a recipe for a sauce to serve with the above. I have the following ingredients at my disposal:
double cream, shallots, spring onion, red wine vinegar, white wine vinegar, honey, lime, lemon, mustard, ginger, garlic, butter, teriyaki sauce, balsamic vinegar, cider vinegar, olive oil, and other basic store cupboard items.

Preferably I would like to incorporate the double cream in the sauce.

But all ideas welcome. Please feel free to ask any relevant questions.
