Hummingbird Cake
From: The Cake Mix Doctor

3 c all-purpose flour
2 c. sugar
1 tsp. baking soda
1 tsp. ground cinnamon
½ tsp salt
2 cups chopped ripe bananas
1 c. drained, crushed pineapple
1 cup veg. oil, preferably canola
3 large eggs, beaten
1 ½ tsp. vanilla
1 c. finely chopped pecans (opt.)
ICING:
3 oz cream cheese at room temp.
½ c (1 stick) butter at room temp.
1 lb (about 4 ½ cups) confectioners sugar, sifted
1 tsp vanilla
To make the cake, position racks in the center and bottom third of the oven. Preheat oven 350 F. Lightly butter 2 (9-inch) round cake pans; sprinkle evenly with flour, and tap out the excess. Sift the flour, sugar, baking soda, cinnamon and salt into a bowl., In another bowl, stil or whisk bananas, pineapples, oil, eggs, and vanilla until combined. Do not use an electric mixer. My special cake is b the Hell's Angels cake- you make a nice fluffy white angel food cake but then you take a round red-frosted devil's food cake and while the angel food is still warm you put the devil's food on top and it smashes down the fluff just enough and makes the red frosting drip onto it so it looks like blood...but it is really yummy! giggles, bannibal here asked who you were. He is going to be happy to know that you are one of my first contacts here and that we have never had any spiteful or mean things that came from or came attached to you,, sandy is one of the good guys erer gals, bruce. She will never do anytyhing against you at all.

The 2nd link offers a recipe to make 4 loaves. This one makes one laf
Banana Bread Recipe
nonstick cooking spray
1 stick butter or margarine, soft
1 cup sugar
2 eggs
3 medium soft bananas, mashed
3 Tbsp. sour cream
1 Tbsp. lemon juice
2 Cups sifted flour
1 - 1/2 tsp. baking powder
1 Tsp. salt
1/2 Tsp. baking soda
1 cup chopped walnuts
Preheat oven to 350 degrees Fahrenheit. Light spray a 9X5X3 inch loaf pan with nonstick cooking spray and set aside.
In a medium mixing bowl, cream together butter or margarine and sugar. Add eggs, bananas, sour cream and lemon juice. Wet mixture is formed.
In a separate bowl, shift together your dry ingredients consisting of flour, baking powder, salt and baking soda. Flour mixture is formed.
Next add the wet mixture to the flour mixture and stir mixture just enough to moisten the flour. Banana bread batter is formed. Don't over beat your batter, because you want your banana bread recipe to turn out perfect.
Now, using a wooden spoon or rubber spatula, spoon your batter into the already prepared loaf pan. Bake on center oven rack at 350 degrees for 50 minutes to 1 hour. Your banana bread is done when a tooth pick inserted into center of bread loaf comes out clean. Remove from oven and let cool on a wire rack.
