melt velveeta and let them dip their veggies in it. Also, if they tried it and dont like it, thendont make them eat it, that is just mean. Give them vitamins and when they get to be about 20 or so they will eat lots of things that they never would as a child...

Cauliflower can be washed and shaken in a zip lock bag with seasoned flour, salt, and pepper, and any other seasonings you like. Pan fry the pieces in a little oil and butter. If they absolutely won't eat them then you can cook the cauliflower and puree it in a blender and use it for all kind of thickening
agents in gravies, soups, and stews. They will never know it's in the food. Try stuffed zucchini boats, wash, cut in half, and steam zucchini until tender. Spoon out the middle meat of the veggie leaving a boat shape. Mash removed vegetable with
cheeses, parsley, basil, and a little spaghetti sauce. Try some seasoned breadcrumbs, a little butter, and more cheese on top after stuffing the mixture back into the boats. Bake until bubbly and serve on lightly buttered spaghetti pasta along with a little more spaghetti sauce. Also, you can shred the raw zucchini in a food processor and add the mixture to soups and meatloaves as fillers. Again, they will never know it's there. Add fresh spinach chopped to regular salad. If they won't touch it, again, add to soup and meatloaf after chopping very finely. Try cream of broccoli soup with cheese. Cook the broccoli, puree, and make a soup of the puree, cheese, milk, chicken flavored broth. You can even use pureed cauliflower to thicken the soup instead of a flour based roux for the cream of broccoli and cheese soup. Good luck!

No disrespect intended But you could try cooking them properly.
If you do this long enough you discover that there are three big reasons that people don't like a certain food item;
*Cultural prejudices
*Texture aka mouth feel - I will eat almost anything but because of the mouth feel issue I don't eat avacados
*They never had an opportunity to taste the food item properly cooked .
Most people overcook and under-season vegetables and a few under-cook and over-season. Both methods are of course wrong . A properly cooked vegetable , looks great w/ vibrant color.and tastes great w/ all the nuance that nature intended it to have.
Try using the pro technique of blanching, shock cooling in ice water to stop the cooking process and retain color then finish using a variety of methods including a quick saute`.
Believe or not cauliflower can also be roasted. Preheat oven to 400
Separate the branches from the main stem you should have about 8-10 pieces
lightly toss the florets in a little oil , salt & pepper
bake single layer until you see carmelization- 20 minutes -serve

Add cheese sauce or warmed cheeze whiz.
Most kids will eat anything drenched in cheese, and all those veggies go great with it!
Spinach can be chopped up and mixed in to spaghetti sauce, or meatloaf (just be sure to drain the liquid out really well!) or almost anything andit won't be noticeable.
For zucchini, you can also find recipes for zucchini cake, or even chocolate & zucchini cake.

Some kids just truly cannot tolerate broccoli, cabbage and cauliflower because of their sulfurous taste. If that's the case, just try to get them to take one bite whenever you cook them. Otherwise, it is kind of mean to force them to eat it. The one bite rule keeps them tasting things in case the kids' taste changes, which it sometimes does. I also finely shred zucchini, onion, mushrooms and carrots to add to spaghetti, chili and soups.
One of my pickiest kids won't eat veggies he can see, but he'll compliment me on the great chili or spaghetti when I cook it that way.
If the kids are getting a fairly balanced diet and a vitamin pill 3-5 times a week, chances are that they are fine.
Good luck.

When my kids were little I used to make raw cauliflower and broccoli trees.
Years ago we used to have little plastic Christmas trees that we used to stick gumdrops on.
Instead of using gumdrops I would put button sized stalks of broccoli and cauliflower on it.
A couple of times a week (when dinner wasn't rushed) I would make their "appetizers" full of fresh vegetables. All total they would get around a 1/2 cup of fresh veggies that way. I would allow them to dip the veggies in french onion (no ranch back in the old days LOL). I would also add cherry tomatoes as the star and add a few carrot coins on the tree.
In the summer I would cut a cucumber in half the long way. Place it cut side down on the plate and add cut veggies with toothpicks to make a caterpillar. We would take these and have a picnic in the back yard.
Try these or make up some of your own with your kids-just try to have fun with it.

Hide them like in a sauce. Cut them really small or puree them add to a soup. Just keep trying don't give up, I know it's hard and I comtend you. If they like lasagna throw some there give your meals weird names to encourage them to try. Have you tried the 3 bite rule?
