Egg wash is used on the top of fruit pies or other baked items to give them a shiney brown appearance.If you are going to make 1 or 2 fruit pies .I suggest you use 1 egg 3 TBLS. water and 1 tea spoon vegetable oil beat together until foamy
using pastry brush paint top of pie except for the fluted edge coating evenly.
for other items such as cinnamon rolls french bread or other types of bread omit vegetable oil.

There are two types of egg wash. One is the egg white mixed with milk. This type of egg wash is used to seal the pie top onto the pie. Sometimes you need this type of egg wash to make sure the pie lid is closed. Then there is the egg yolk and milk egg wash. This is to give the pie crust a golden brown color.

You scramble an egg and then with a pastry brush, dip it in egg and brush over your pie crust when your ready to put in the oven. The egg wash will give it a nice shiny finish. bettyk

It is a whipped up egg used to brush on the crust to give a nice appearance after baking.
You can achieve the same thing with milk & a sprinkling of sugar or just water and a sprinkling of sugar and not have to waste the remaining whipped egg.

egg wash is the product that you brush over the top of a pie or other baked goods. it is simply a mixture of 1-2 eggs that have been beaten well and then appx. 2-3 tbsp of water added to it.

You can use a little milk brushed over the top crust (without the egg) to get basically the same results. I ususally top off with a little sprinkling of granulated sugar and, depending on the type of pie you are making, you can add a touch of cinnamon to the sugar before topping off your crust.

You separate an egg (or 2 depending what is called for), beat the yellow, and brush a coat of it over the pie crust. Then you bake the pie crust for a short time (based on what the recipe says) before you put the filling in.
