I've never cooked eggplant before, though I have eaten it at restaurants. I found I liked it when I had eggplant parmesan at the Il Fornaio's in Sacramento. Does anyone have any tips for working with eggplant? Do I peel it? All the time or only if the skins are tough? Any general tips for me?

Oh, and if you could post your favorite eggplant recipe, I'd appreciate that as well. They'll be on sale all week or until we've 'thinned the herd'. Our local store got waaaaaay too many of them in their last produce shipment, and I'm not one to pass up cheap food.

preferably one that is made in a deep and long (rectangular shape) casserole dish, the white ovenproof baking dishes, and a recipe that makes this dish with a pie crust at the top, showing the shape of a fish, like this: http://www.historicfood.com/Design/Assets/Images/Thumbnails/fish-piethmb.jpg

I'm not sure if its a pot pie or a casserole, or a mix of both. Please help, thanks. And if you have a photo of it, please post the link here.

I know how to find recipes online, so dont post me links to recipe web pages. I've already looked at those pages, and will resort to choosing one to use. But they all look very similar, so I dont know which is the best?

I'd like a recipe from someone who has made them and knows the recipe is a good one!

Thanks to all who answer!

I lost this recipe. It was wonderful. You put frozen hashbrowns, cream of chicken soup and Half & Half in a crock pot. I don't remember the amounts or other ingredients.
