Do that, cook up rice (at least2-2.5 cups of it), mix rice with meat, add a can of cream of mushroom soup, a bit more seasonings, bake in oven at 350 degrees for about 30 minutes.

Sounds delicious. Just a hint- don't use too much salt, whatever you do! Pork is a very flavorful meat and too much salt can spoil an otherwise delightful dish!
PS... Mashed potatoes would go nicely with this

What you suggested is fine. Another option is tossing all that into a crockpot, cover with water and cook until supper.

It does sound good. A friend of mine made something very similar to that but he put it on rolls and had it as a sandwich. I didn't try it but it looked good. Good luck.
