Caramel-Pecan Pie:
Prep: 20 min., Bake: 38 min., Cook: 7 min.
1/2 (15-ounce) package refrigerated piecrusts
28 caramels
1/4 cup butter
1/4 cup water
3/4 cup sugar
2 large eggs
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1 cup coarsely chopped pecans, toasted
Chocolate-Dipped Pecans (optional)
Fit piecrust into a 9-inch pie plate according to package directions; fold edges under, and crimp. Prick bottom and sides of piecrust with a fork.
Bake piecrust at 400° for 6 to 8 minutes or until lightly browned; cool on wire rack.
Combine caramels, butter, and 1/4 cup water in large saucepan over medium heat. Cook, stirring constantly, 5 to 7 minutes or until caramels and butter are melted; remove from heat.
Stir together sugar and next 3 ingredients. Stir into caramel mixture until thoroughly combined. Stir in pecans. Pour into prepared crust.
Bake pie at 400° for 10 minutes. Reduce heat to 350°, and bake 20 more minutes, shielding edges of crust with aluminum foil to prevent excessive browning. Remove pie to a wire rack to cool. Top with Chocolate-Dipped Pecans, if desired.
Yield: Makes 8 servings

Ingredients Directions
2 Eggs, Slightly Beaten
1 Cup Light Corn Syrup
1/4 Cup Sugar
2 Tablespoons Flour
1/4 Teaspoon Salt
1 Teaspoon Vanilla
1-1/4 Cups Broken Texas native pecans
Preheat oven to 375 deg F.
Spread pecans in an unbaked 9-inch pie shell.
Mix remaining ingredients and pour over pecans.
Bake at 375 deg F. for 40 to 50 minutes or until filling is set.
TIPS:
Cover the edges of the pie crust with aluminum foil about halfway through baking to prevent crust from getting too brown before the pie is done.
For best results, be sure to use only Texas native pecans. If you insist on using hybrid pecans or pecans grown in some other state, don't complain to us if you aren't happy with the way your pie turns out.
Note that this recipe calls for Light Corn syrup (we use the Karo brand). Many people use dark syrup in their pecan pies but we find that this gives the pies a rather strong taste and a darker, less appealing texture.

Fudge Butter Pecan Pie
This takes Pecan Pie to a whole 'nother level!!!! Played with the recipe til I got it just right! ;)
8 servings 55 min 15 min prep
1 cup chocolate chips
1/2 cup butterscotch chips
2/3 cup evaporated milk
2 tablespoons unsalted butter
2 eggs
1 cup light brown sugar
2 tablespoons flour
1/4 teaspoon salt
1/8 teaspoon cinnamon
2 teaspoons good quality vanilla essence
1 1/2 cups chopped pecans
1 (9 inch) unbaked pie shells
Combine chips, evaporated milk and butter in small saucepan.
Cook over low heat, stirring constantly, til mixture is smooth and creamy.
In medium to large bowl, lightly beat eggs.
Add/ whisk in rest of ingredients til well mixed.
Gradually stir in chocolate mixture then pour into unbaked pie shell.
Bake in 375F oven for 40 minutes, or til just set.
Cool on rack (top will look shiny like a brownie).

"Pecan Pie" - 8 servings

2/3 cup sugar
1/4 cup butter or margarine; melted
1 1/2 teaspoons vanilla extract
1/4 teaspoon salt
1 1/2 cups pecan halves
1) Preheat oven to 375*.
2) In medium bowl with wire whisk, beat eggs well. Beat in corn syrup, sugar, butter, vanilla and salt until well blended; pour into piecrust, reserving 1/4 cup mixture.
3) Arrange pecan halves in single layer over filling; line around edge, then inside that edge, all the way in to center. Drizzle reserved syrup over nuts.
4) Bake 45-50 minutes until knife inserted about 1" from edge comes out clean. Cool before serving.

"This is an all time favorite Thanksgiving dessert. It has layers of creamy cheesecake, crunchy pecans, and smooth custard."
INGREDIENTS:
1 (9 inch) deep dish pie crust
1 (8 ounce) package cream
cheese, softened
1/3 cup white sugar
1 teaspoon vanilla extract
1 cup chopped pecans
3 eggs, beaten
1/4 cup white sugar
1 cup light corn syrup
1/2 cup evaporated milk
1 teaspoon vanilla extract
DIRECTIONS:
1. Preheat oven to 375 degrees F (190 degrees C).
2. In a medium mixing bowl, blend together cream cheese, 1/3 cup sugar, and 1 teaspoon vanilla. When mixture is smooth, spread into bottom of pastry shell. Sprinkle cream cheese layer with chopped pecans.
3. In another medium mixing bowl, combine eggs, 1/4 cup sugar, corn syrup, evaporated milk, and 1 teaspoon vanilla extract. Whisk until mixture is smooth. Pour mixture over pecan layer.
4. Bake in preheated oven for 35 to 40 minutes, until set in center.
