I have been a lacto-ovo vegetarian for about eight years. I have tried to give up cheese on several occasions because I know it is very bad for me (not to mention the cow). I was wondering if it was easy for you or did you find it difficult as well?

Making a special dinner for my husband and won't have long after I get off work. Can you PLEASE recommend something easy to make for him that is not too time intensive and tastes great. Also, I hate ice cream so that's OUT of the question! Thanks!
