The green part isn't poisonous or anything...just tends to be stalky /tough and unpleasant to eat...the whiter parts are the milder and so considered to be the best and is usaully the part eaten.....if it is a mild sauce just use the white ...for something more robust like a leek soup can use some of the lighter green areas....you can usually tell by cutting when it is getting too fibrous and should be avoided..i.e. it is more difficult to cut

It is completely edible with a slightly different intensity of flavor and tenderness between the white and the green part of the leek.
