I guess it depends on the wine but, in general, what's the consensus?

If you have a good vacum pump: 3 days at room temp, 5 in the fridge. You can still use if for cooking if you go a day or two over. If you are not sure, you can give a sniff or taste, any hint of "vinegar" and it's time to toss!

If it is a nice wine, a bit expensive with some complicated flavours I wouldn't drink it past the second day. It may be re-sealed but with a quality wine the horse has bolted the moment you removed the cork.

If it is ernest and julio's finest there is not much more that can be done to ruin it so they should be good for months.

red wine I would say two days at the most even with the vacuum, white wine I have kept for a week, for some reason the red tastes foul after two to three days

wine starts going off the minute the cork is removed.
I always throw the cork away and if for some reason I have wine over like I've opened 4 bottles and could only manage 3.5 bottles, I will only use the rest for cooking. Even overnight.

It will keep for as long as you wish. You have essentially re-sealed it. I've kept it up to a month...no problem. But, it's much too tempting to drink a bottle once it has once been opened.

No longer than a week. But best within a few days.

If it is re corked I would say two weeks. When I bartended we would re cork it and re serve it. We kept the bottles for about two weeks. Never had any complaints
