can imake this cake.. ( well im making muffins) with only 2 eggs? will my cake not turn out as good? ihave everything else i need...but only 2 eggs...the recipe onthe back calls for 3 tho

Does anyone know how to get the cannoli filling creamy? I am a pastry chef that has used every trick in the trade I know. Press the ricotta through a chin-wah and still came out gritty! Looking for that silky smooth texture!

the "Water Mellon Rind Pickles"' recipe I am looking for is this.
Very old of course...but the > Red Part of watermellon is on the water mellon rind pickles,I saw my grandmothers this way,and hers were long wide strips too,in long tall canning jars.
This is the recipe I want this recipe,grandma
did alot of canning,and I miss her so much.Eating and making her recipes calms me down.

Since I'm allergic to almost everything including yeast, I'm looking for a yeast free recipe. I don't want baking powder because I have a corn allergy and I can't use cream of tartar because I also have a mold allergy. Simply using baking soda and lemon juice if possible.
