I take my boys camping and this is the easy, cheaters, camping way for a shepards pie...for 3 people (well, me and 2 young boys...)with no leftovers (too complicated with an ice chest)
1.) 3/4 lb to 1 lb ground meat. I use hamburger. I make it into a gigantic hamburg patty. I cook it in my camping cast iron skillet. It fills up the bottom of the pan. I flip it, cook other side. It always breaks at this point.... drain off the fat as best I can, if there is any...the cast iron absorbs some!
2.) drain a can of corn, like green giant niblets, with little water anyway. Pour on top of the cooked meat.
3.) In seperate pan ( I only bring 2 pans when camping... my skillet and a small cooking pan) make a package of instant mashed potatoes, the kind that is flavored (like 'garlic and chive, or 4 cheese), one package makes a small amount.
4.) top the hamburg/corn mix as best you can by spooning the mashed potatoes on in little plops allover the top of the corn. Cover it all in foil and let it heat thru slowly for about 7 minutes on low flame.
No,it's not the best recipe you are going to get, , but probably the most fuss-free. I really prefer real mashed potatoes, but this hits the spot when it's rainy camping, besides, my boys love it this way....

Prep skibob. Soy, Pineapple juice Brown sugar vinegar add meat. put in a zip lock bag and store in refrigerator until you pack an ice chest. These are so good. Soak your stick while setting up camp. Then cook that evening or the next day. every body will love these. a big hit. Try to pre plan your meals so your vacation is not all work. Hamburger and baked beans is an easy one dish meal. I always carry Onion Rice Salt Pepper and A can of soup on the trip Just in case u see a rabbit. Don't forget the sausage. U can use in the Jambalaya. Paper plate are a must. u don't want to work the whole time. French fries Peel potato's soak in water with a cap of vinegar. keeps potato prettier and browns evenly when making french fries.

If it is a car camping trip where you have a cooler than bring good food like steak or burgers. When I am camping (4 days from the closest dirt road) I pack a lot of pasta. Rice and beans with a lot of seasoning and tortillas are also really good.

This is a favorite car camping meal:
In the center of a large piece of heavy duty aluminum foil place a hamburger patty (chicken is good too). On top of the meat, place a slice of onion. With the skins on, slice potatoes thinly and add a layer of potatoes on top of the onions. Add salt, pepper, garlic and canned baked beans. Close the foil so that it is sealed. Place in hot coals for 30 to 45 min until its done. A very good meal.

Another great thing you can make with tin foil is dessert. You get fruits (bannana, peach and strawberry work well), nuts, chocolate, ghram crackers, candy bars, pretzels, marshmallows, and anything else sweet you want. Let people pick and choose what they want. Place whatever you like in a piece of tin foil, close it, and heat it. Better than S'mores.

You can make hobo dinners. Take tin foil put a hamburger patty in it season it now add onions, mushrooms, potatoes or what ever you think will cook good. Wrap up the tin foil and put the package in the outer edge of the fire and let it cook for about 15 to 20 minutes. Keep a watch that the foil doesn't start to glow orange or you have it in to hot of an area and will burn it up. This also works at homw in the fire place.

By golly, I knew my years in the girl scouts would come in handy one day!

Girl Scout Stew:

2 cans condensed vegetarian vegetable soup
1 can spam or treet, cubed
1 can sliced potatoes

Brown the spam or treet cubes in skillet, add the condensed vegetarian vegetable soup - do not add water! Add the potatoes. Stir to coat all.

Cover and let simmer until ready to serve (about 15 minutes). Serve over a bun. You can use 1# hamburger instead of Spam or Treet, but since you'll be camping, keeping ground meat cold might be a bigger trick than you are ready for.

Speaking of keeping stuff cold in the cooler longer:
Fill individual serving sized soda bottles 3/4 of the way with pure drinking water. Screw the cap on and freeze. Put these on top of everything in the cooler. They will last longer than just regular ice and when mostly thawed, will give you ice water to drink - way out in the woods.

When my husband and I went to the deer lease he would cook what he called "Cowboy Stew".
Brown 1 lb hamburger meat in a skillet, add a small chopped onion and cook until onions are wilted then add a can of Ranch Style bean, do not rinse can. Simmer 20 minutes and serve.
Recipe can be doubled or just use more beans if you like it full of beans. Also you can use kidney beans or pinto beans instead of Ranch Style.

We lost all of our food once on a camping trip, the only things we were able to save were Macaroni and cheese a pack of hot dogs and an onion, cut up the dogs and onion threw it together in a pot with the mac & cheese , and it was actually pretty good, my dad still cooks it when he goes camping, he calls it Sh*t luck stew

Easy For You, Delicious For Everyone!

Breakfast:
*Make Pancake batter at home, then place into a gallon size Milk Jug, that has a screw on lid.
*Pack enough Frozen Strawberries in Heavy Syrup, for everyone to use as syrup.
*If you-all like Bacon, it comes pre-cooked at the grocery, needs only reheating.

Lunch:
*Pre-Cooked at home, Fried Chicken, serve with homemade *Potato Salad, & Pickled Beets,
*Chips &/or Pretzels, and have a couple different Fruits available.

Dinner:
*Bring Cold Cuts with you, -or- Bake a Roast at home, slice it thinly, put in plastic air tight bags, and put in cooler.
*You'll need loaf bread -or- Pita bread, lettuce, tomatoes, pickles, onions, etc.

Supper:
*Grill what you like; Steaks, Chops, Ribs, etc., Whatever you select, start it Marinating at home first. This will reduce the cooking time, and any meat will be made tender. Use a Turkey Oven Bag for marinating, because of its size. Just before leaving put it into the cooler.
*Baking Potatoes, with Sour Cream and Butter, Maybe Some Chives, and you just put on grill, and serve, no fuss.
*Green Beans Casserole, made in advance, then re-heated on grill.
*Two cans of Wax Beans, (1) Green, (1) Yellow, (1) Bottle Italian Salad Dressing.
At campsite, drain the Beans, Put In Bowl, Pour Dressing Over, Serve.

Dessert:
*Homemade Cupcakes, (Take with you).
*Frost at campsite, with canned frosting.

No one has breakfast ideas!

Here's one I just cooked at home this morning... Canned biscuits! You can put them in a skillet with a good bit of butter and fry them. Melt the butter in the skillet and set the biscuits in the pan. When they get a bit of brown to the bottom side, flip them AND THEN mash them out. (like a pancake) If you try and mash them before you flip, they stick to your spatula. Brown them as good as you want and serve them with syrup like pancakes or i always topped them with a bit of scrambled eggs, cheese, and bacon. They're REALLY good and canned biscuits are the camping no brainer. As long as you keep them cool ands they don't EXPLODE that is!!! ;-)

This was always my camping favorite as a kid. They're really cheap, too. Leftover biscuits were always snacked on for the rest of the morning... Hope you find this handy!
