Best way to cook spuds in their jackets is in the oven. In foil at about gas mark 6 for about 1 half hours, dependant on ya cooker. Microwave is quick and easy but you dont get the taste. I would go 7-8 minutes in the micro if you're not confident with the cooker..

The type of spud you choose is most important. For micro or roasting buy Maris Piper, Roosters, King Edwards or Home Guards(early). For 'balls of flour' try British or Irish Queens. Get to know that spuds are not all the same.

You need an oven too. Prick the spuds, wrap them in kitchen paper and cook in the Micro., Out of micro., put on an oven tray pour over a little olive oil and sprinkle with salt.
They will crisp up in the oven in 8-10 mins, but don't over cook or you will give 'em indigestion again.

Hot Mackerel Spuds Serves 1
Ingredients:
1 115g (4oz) `ready to eat' hot smoked mackerel fillet, defrosted, skinned and cubed
1 170g (6oz) baking potato, scrubbed
3 15ml spoon (3 tbsp) tub reduced calorie coleslaw
Method
Preheat the oven to 200°C/400°F, Gas Mark 6
or
Microwave Power: 800 Watt
Prick potato, wrap in foil and bake for approximately 1 hour, or until soft. Alternatively, prick potato and cook in a microwave on HIGH for 4 minutes – 4 minutes 30 seconds.
Mix together the mackerel, coleslaw and cucumber.
Cut the potato in half crosswise and top each half with the mackerel mixture.
Bake for a further 5-10 minutes until hot or cook in a microwave on HIGH for 30 seconds. Serve with a mixed salad.

Cook your jacket potatoes normally and then cut them in half and scoop the potato into a bowl, putting the skins to one side. Mix grated cheese and chopped, cooked bacon into the potato until it suits your liking. Then simply put the potato back in the skins and cook for a few minutes longer. If there is any potato left afterwards, you can fry and eat it as part of a fry up. Lovely!

It sounds like you overdid them.
I usually start mine in the microwave then transfer them into the oven to crisp the skin and finish cooking inside,
A medium potato usually takes around 5 mins in the microwave, leave to stand for a further min then test with a knife, if the potato still feels firm in the middle put it back in for a further 1-2 mins
If you are doing more than one potato at a time add on a few min's per potato
Hope this helps.

First and foremost, pierce the skin at least once with the blade of a knife. Make sure you reach the centre of the potato.
Then, depending on the size, microwave on Max for 7 to 10 min. 12 to 15 if they're really big.
THEN, wrap them in foil and let them sit for another 4-5 min. They need this resting time to complete the cooking.

I wash the potato then pierce it several times on top, place it in the microwave and cook on full power for:
Small potato 4-5 minutes
Medium potato 6-7 minutes
Large potato 10 to 11 minutes
If more time is needed then cook in 2 minutes increments until tender

Prick them all over with a fork, stick them in the microwave for 10 Min's, take them out and turn them over but give them a squeeze, zap them for another 10 Min's and do the same as before, however if they are soft when you squeeze them cut one open and see if the centre is soft. If it is check all of them and if done fill them up if not put them in for 5 Min's and check again. If still not done turn them over as before and zap for 5 Min's, keep going until centre is soft. But the best way is prick um, zap um for 10 Min's and whack um in the oven for 30-45 Min's @ 200. They come out lovely and soft in the middle and crispy jackets on the outside.

i wash them and then prick them all over and then wrap in kitchen roll to absorb moisture. depending on the size of the spud i cook them until just slightly soft and for best results i have to use the oven! i pop them in the oven to finish off. there is only the oven that will give you that nice crispy skin .

Forget doing 'em in the micro-wave to perfection. Pierce the skin with a fork all over, quite deep. Micro-wave for 10mins then pop 'em in the oven till done!
Cut open, lashings of butter, then sprinkle with grated cheese, then give 'em me!
