Banana Pound Cake
3 teaspoons sugar plus 3 cups sugar, divided
1 cup butter, softened
6 eggs
1 cup mashed ripe banana (about 2 medium)
1-1/2 teaspoons vanilla extract
1/2 teaspoon lemon extract
3 cups all-purpose flour
1/4 teaspoon baking soda
1 cup (8 ounces) sour cream

GLAZE:
1-1/2 cups confectioners' sugar
1/2 teaspoon vanilla extract
3 to 4 teaspoons milk

Grease a 10-in. fluted tube pan. Sprinkle with 3 teaspoons sugar; set aside. In a large mixing bowl, cream butter and remaining sugar until light and fluffy, about 5 minutes. Add eggs, one at a time, beating well after each addition.
Stir in bananas and extracts. Combine flour and baking soda; add to the creamed mixture alternately with sour cream, beating just until combined.
Pour into prepared pan (pan will be full). Bake at 325° for 75-85 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
In a small bowl, whisk glaze ingredients until smooth; drizzle over cake. Store in the refrigerator. May be frozen for up to 1 month. Yield: 12-15 servings

Banana Upside-Down Cake
1/2 cup packed brown sugar
2 tablespoons lemon juice, divided
1 tablespoon butter or margarine
1/2 cup pecan halves
2 medium firm bananas, sliced

CAKE:
1-1/2 cups all-purpose flour
1/2 cup sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup cold butter or margarine
1 cup plain yogurt
2 eggs, beaten
2 teaspoons grated lemon peel
1 teaspoon vanilla extract
Whipped cream, optional
In a small saucepan, combine brown sugar, 1 tablespoon of lemon juice and butter; bring to a boil. Reduce heat to medium; cook without stirring until sugar is dissolved. Pour into a greased 9-in. springform pan. Arrange pecans on top with flat side up. Pour remaining lemon juice into a small bowl; add bananas and stir carefully. Drain. Arrange bananas in a circular pattern over the pecans; set aside. in a large bowl, combine flour, sugar, baking soda, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Combine yogurt, eggs, lemon peel and vanilla; stir into the dry ingredients just until moistened. Spoon over bananas. Bake at 375° for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes. Run a knife around edge of pan; invert cake onto a serving plate. Serve with whipped cream if desired. Yield: 6-8 servings

Best Banana Cake
2 ½ C flour (I usually do half whole wheat)
1 T baking soda
pinch of salt
½ C butter
1 C sugar
¾ C brown sugar
2 eggs
4 ripe bananas, mashed
2/3 C buttermilk*
½ C chocolate chips or chopped walnuts(optional)

Preheat oven to 350° F. Grease and flour two 8-inch round pans, or 1 8- or 9-inch square pan, or line 24 muffin cups with paper liners.

In a small bowl whisk together flour, soda and salt; set aside. In a large bowl cream the butter and sugars until light and fluffy. Beat in eggs one at a time. Mix in the bananas. Add flour mixture alternately with the buttermilk to the creamed mixture. Stir in chips or walnuts if desired.

Pour batter into the prepared pans. Bake until done -- the muffin pan will probably take 20-25 minutes, the round pans will probably take 30-40 minutes, the square pan will probably take 35-45 minutes. You'll just have to check early, and check often.

Easiest Banana Cake Ever

Mix in blender:

3 eggs
3/4 Cup milk
1/2 Cup vegetable oil
3 ripe bananas
1 tsp vanilla
Sugar to taste (depends on bananas sweetness), I usually use 3 tbsp

Put batter in a mixing bowl and with fork mix in 3 cups pancake flour and 2 tbsp baking powder.

Place batter in square greased Pyrex and sprinkle sugar and cinnamon.

Bake at 250 C for 30 - 35 minutes. Toothpick should come out clean.

If you like banana bread you will want to try this. And, yes, it is baked at 275 degrees F., & it must be kept in the freezer.

3/4 c. butter
2 1/8 c. granulated sugar
3 eggs
2 tsp. vanilla extract
3 c. all-purpose flour
1 1/2 tsp. baking soda
1/4 tsp. salt
1 1/2 c. buttermilk
2 tsp. lemon juice
1 1/2 c. mashed bananas

Preheat oven to 275 degrees F. Grease & flour a 9”x13” dish. In a small bowl, mix mashed bananas with lemon juice, set aside. In a medium bowl, mix flour, baking soda & salt. Set aside. In a large bowl, cream butter & granulated sugar until light & fluffy. Beat in the eggs one at a time, then stir in vanilla. Beat in the flour mixture alternately with the buttermilk. Stir in banana mixture. Pour batter into prepared pan. Bake in preheated oven for 1 hour, or until a toothpick inserted into the center of the cake comes out clean. Remove from oven & place directly into freezer for 45 minutes. This will make the cake very moist. Spread “CREAM CHEESE FROSTING” (see below) on cooled cake. Yields: 12 servings. Note: Walnuts, pecans, etc. may be added to the cake or frosting, or both.

CREAM CHEESE FROSTING

1/2 c. butter, softened
8 oz. cream cheese, softened
3 1/2 c. confectioners' sugar
1 tsp. vanilla extract

In a large bowl, cream butter & cream cheese until smooth. Add vanilla, & beat well. Add confectioners sugar & beat on low speed until combined, then on high until frosting is smooth. Spread on cooled cake. Nuts of your choice may be added to the frosting.

how about banna cheese cake recipe1 gramham cracker crust...in a mixing bowl mix 16 ozs cream cheese (2 Pkgs)1/2 cup sugaruntil smooth then add by folding in 2 cups of cool whip slice 3 or 4 ripe banannas arrange the bannanas in the crust and pour 1/2 oc cream chhese liquid...then layer the rest bannanas and cream cheese liquid..now mix 1 pkg of bannana puidding instant direction on box fold in 1 cup of cool whip or if you used a 8 oz carton use the rest from the 2 cups used...pour this over mixture and chiil at least 2 hrs................
