Italian Beef Dip Sandwiches
Ingredients
1/4 cup zesty Italian dressing
1 tablespoon roasted garlic
2 1/2 cups frozen pepper stir-fry (sliced bell peppers, onions)
1/4 teaspoon pepper
4 Bakery hoagie rolls
1/4 cup mild pepper rings
1 (10.5-ounce) can condensed beef broth
1 tablespoon dill relish
12 ounces Deli sliced cooked roast beef

Steps

1. Preheat large sauté pan on high 1–3 minutes. Place dressing, garlic, pepper stir-fry, and pepper in pan. Cook 5–6 minutes, stirring occasionally, or until vegetables are tender.
2. Slice rolls horizontally to, but not through, other side; set aside. (Or for warm crusty rolls, place in oven 3–5 minutes before fries are done.)
3. Stir pepper rings, broth, and relish into stir-fry and bring to boil.
4. Separate beef slices while adding to pepper mixture. Cover and remove from heat. Let stand 3–5 minutes or until fully heated.
5. Fill rolls, using tongs, with beef mixture. Use liquid for dipping sauce. Serve.

Cheese Fries
Ingredients
aluminum foil
16 ounces frozen seasoned French fries
1–2 fresh chives (optional)
3/4 cup shredded Mexican-blend cheese
1 tablespoon cooked bacon pieces

Steps

1. Preheat oven to 450°F. Cover baking sheet with aluminum foil. Spread fries on foil and bake 15–20 minutes until golden.
2. Rinse chives and chop finely.
3. Remove fries from oven. Lift corners of foil to gather fries into center, making a mound. Sprinkle cheese, bacon, and chives over fries. Return to oven 1–2 minutes or until cheese melts. Serve.

Soup, try this one

Leek and Basil Soup

4-6 servings
1 tbsp Pure Olive Oil
2 leeks,washed,white part sliced
1 red onion,chopped
2 tbsp Pesto Basil Sauce
1 garlic clove,.nely minced
2 potatoes,peeled and sliced
4 cups heated chicken stock 1 L
salt and pepper

Directions:
1 •In a large saucepan,heat oil over
medium-low heat.Add leeks and onion.
Cook 5 minutes.
2 •Add remaining ingredients,season to
taste with salt and pepper,and bring
to boil.Cook at least 20 minutes over
low heat,stirring occasionally,until

A nice cool salad. Like orzo, macaroni, any greens that are safe, cottage cheese, but skip the potato salad. I'm thinking carb overload!

HERBED MUSHROOMS:

1 TBS each lemon juice , worcestershire, mustard
2/3 c water
1 TBS flour
3/4 tsp each thyme, marjoram leaves
3 TBS butter
1 medium onion, chopped
1 1/2 lb mushrooms, sliced
s&p
1/2 c each chopped green pepper, celery

In a small bowl combine lemon juice, mustard, worcestershire, water, thyme, marjoram and set aside. Melt 2 TBS butter and add mushrooms and cook until golden. set aside. Melt remaining butter and cook onion, green pepper, celery and garlic until soft. Blend in flour, cook and stir until bubbly. Gradually pour in lemon juice mixture and continue to cook and stir until sauce boils and thickens. Add mushrooms and season to taste w/s&p.

AND some fresh veggies with dip:
SMOKY COTTAGE CHEESE DIP:
1 c creamed cottage cheese
1 (3 oz) pkg cream cheese
2 TBS milk
1 tsp minced onion
1/2 c minced ripe olives
1/2 tsp liquid smoke
1/4 tsp garlic salt

Beat together cottage cheese and cream cheese and milk. Blend in remaining ingredients.
