Yes, its very tasty. This recipe is very close to what it really tastes like.


Filipino Adobo

1 cup distilled white vinegar or cider vinegar
1 cup water
2 tablespoons peeled and crushed garlic
2 teaspoons salt
2 pieces bay leaves
1/2 teaspoon fresh coarse ground black pepper
1 lb chickens, cut into serving pieces
2 lbs pork butt, cut into cubes
soy sauce
oil

Add vinegar, water, garlic, salt, bay leaves and pepper into a large casserole. Bring to a boil. Add the meat, cover and bring to a boil. Simmer and cook for about 30 minutes. Sprinkle liberally with soy sauce and cook for an additional 10 minutes. Remove meat and reduce sauce. Remove sauce to a bowl. Put oil into the casserole and brown cooked meat. Drain oil from the casserole, and return the reduced sauce back with the meat.
Serve hot or cold with warm rice.

As far as I'm concerned it's the best meat dish I've ever tasted in my life. I especially mean pork adobo. Not very healthy because of the animal oil, but eat it with rice, sprinkled with a little salt and pepper. The pork chunks in the adobo I tasted a long time ago were almost crispy at the edges, so they must have been fried or something, although I have no idea how the recipe goes. In that same meal I was also intoduced to Filipino "lechon", another pork dish-- I believe it is roasted on the pit. This was just as heavenly as the adobo. Would love to know where I can get these dishes in the States today. Please share if you know a source. Thanks.

yes i worked with a filipino at the pentagon...gili gili. and pancit is my favorite....
