I've got a TON of zuchinni from the garden and I don't know what to do with it all. I am making some zuchinni bread this afternoon. That's about all I can think of.

How else can I utilize this vegetable? Can I freeze some of it?

When I slide them in the water the whites break up. Are you supposed to add something to the water? Someone told me a bit of vinegar but it seems you would taste that in the eggs. Also, anyone have any good recipes using poached eggs?

I love to just fry the slices with lots of olive oil or margarine till they're really dark and almost crunchy and then spinkle them with brown suger ... so good!
