I've got a TON of zuchinni from the garden and I don't know what to do with it all. I am making some zuchinni bread this afternoon. That's about all I can think of.

How else can I utilize this vegetable? Can I freeze some of it?

Good to hear someone grows something in the garden!

Go to www.foodnetwork.com and type in 'zuchinni'. You should be able to find many great recipes! I picked one out that sounded good for you:

CURRIED ZUCHINNI COUSCOUS:
2 tablespoons olive oil
1 fine diced yellow onion
1/2 tablespoon minced garlic
1/2 tablespoon minced ginger
1 tablespoon madras curry powder
2 cups diced zucchini
Salt and black pepper, to taste
3 cups cooked couscous, already fluffed
1/4 cup sliced green scallions, for garnish

In a saucepan on medium heat, coat with olive oil, sweat the onions, garlic, ginger and curry powder. Season. Add zucchini and saute for 3 to 5 minutes until soft. Check for seasoning. Keep on very low heat.

CURRY OIL:
1/4 cup madras curry powder
Pinch salt
1 cup canola oil

In a small bowl, combine curry powder with salt and about 1/8 cup water to make a loose paste. Whisk in oil and let stand 1 hour to settle. Use the top, clear yellow oil. PLATING: Using a ring mold, cut out tuna fish can (both sides filed) or a small, oiled bowl, fill with half couscous then half of the zucchini. Place trout on top and drizzle with curry oil and garnish with scallions.

I got this really yummy recipe! If you have squash, then put that in too. Cut the zuchinni & squash up, just slice it, then put it into a big plastic bag, like a large one, fill it up until 2 inchies are left at the top w/ no vegetables. Then put 2 capfulls of olive oil, a teaspoon of salt and a teaspoon of pepper. You can add or reduce the olive oil, salt, or pepper, as much as you want. Then, spread it evenly in a tray, have the tray foiled before though, and cook at 400 degrees for about 15 minutes. But don't let them get more than lightly browned. Afterwards, if you want, you can put some grated parmesan cheese on it. It tastes GREAT!

Yes, freezing it will be fine. My mom used to preshred and measure it for zuchinni bread. Another thing to do with it is to sliced it down and place a layer of it in a casserole dish or shallow baking pan. Sprinkle to taste with Italian seasoning and Greek seasoning, Cover with shredded cheddar. Add a few Tbs. of water for moisture. Then bake at 350 until zuchinni softens and cheese melts. My kids and family gobble this up. For a 9x13 in. dish I used 3-5 zuchinni depending on the size of them.

It's a good idea to shred a bunch of it , put in zip-loc baggies & freeze for use in making zuchinni bread in the months ahead....hey....zuchinni bread is good all year long !

Cut up 1 lb. chicken breasts in chunks. Saute w/ 1 onion and 2 or 3 diced cloves garlic. Add 3 or 4 cut up zucchini. Cook @ 3 min. Add 1 can Rotel tomatoes and green chilis, cover and simmer 20 min. Add 1/4 lb. cubed Velveeta, turn off heat and let cheese melt. Stir melted cheese to blend, add salt and pepper to taste. This is a Mexican dish called Calabazas con Pollo. It's very good.

Zucchini Pancakes

"An easy recipe to make. A delicious vegetable pancake for breakfast, brunch, lunch or just a snack."
Original recipe yield: 4 servings.
Servings:4 (change)

INGREDIENTS:
4 eggs
2 cups grated zucchini
3/4 cup all-purpose flour
1/2 teaspoon white sugar
1/2 teaspoon salt
3 tablespoons olive oil
4 teaspoons baking powder
1/4 cup butter, melted

DIRECTIONS:
Preheat grill to 425 to 450 degrees F (220 to 225 degrees C).
In a large mixing bowl, beat eggs, add shredded zucchini and mix well using a fork. Add flour, sugar, salt and vegetable oil and stir to blend well. Finally, add baking powder and mix well using a large spoon. The batter's consistency should be like heavy whipping cream.
Spoon batter on hot grill (about 2 tablespoons) for each pancake. Cook until there are no longer bubbles forming in the pancake about 2 minutes; turn over and cook for 2 minutes longer. Rub pancakes with melted butter and serve immediately.

zuchinni bread is really good i have to say,, but you can try selling the veggie or the bread in a local neighborhood, or you could just have one big zuchinni party!!!!! good luck! i hope you make @ least a few bucks out of it!

I've frozen zuchinni, and it turned out fine! I like to boil mine with salt and butter, and then, of course, there's fried zuchinni!

We slice it and fry it in a little butter with garlic, onion, salt and pepper.

We also make a bunch of zucchini bread every summer and freeze it. We double wrap it in saran wrap and then foil, and it comes out great when we thaw it.

sautee onion and thinly sliced zucchini until browned. Add seasoned egg and make an omelette.
Did you know that you can dip the flowers in batter and fry them? They are yummy but have to be fresh!
