I like to keep it simple
nothing goes better with babyback ribs than nice hot crispy fries and a big wedge of iceberg lettuce with blue cheese dressing .
EASY BLUE CHEESE DRESSING
1 (1 1/2 ounce) packet dry onion soup mix
1 cup sour cream
1/2 cup mayonnaise
1/2 cup blue cheese, crumbled
1/2 cup milk
In a medium bowl, combine all ingredients.
Stir until well blended.
Cover and chill at least 2 hours before serving.
If too thick for your taste, thin with added milk until desired consistency.
For a little added flavor, i like to sprinkle the salad with a little crispy bacon.
This is a very simple side salad but is full of tons of flavor.
(if you aren't a fan of blue cheese, ranch dressing work really well also.

My favorite thing is not a salad but a side dish...Chipotle Maple Smashed Sweets
2# Sweet Potatoes, Baked and skinned
1/2 stick butter, cut into chunks
1 chipotle pepper in adobo sauce, chopped fine
1/4 cup 100% pure Maple Syrup (Honey can be substituted and is almost as good)
salt and fresh ground pepper to taste
Combine all ingredients in a mixing bowl and mix with a mixer until almost smooth, some texture is good. Serve hot with butter pats.

Tex-Mex Salad with Chili Vinaigrette
Makes 8 to 10 servings
Ingredients:
Salad:
1 cup long grain rice
1 15 ounce can pinto beans, rinsed and drained
1 1/2 cups fresh or frozen whole kernel corn
3 green onions, sliced
1/4 cup red sweet pepper, chopped
Vinaigrette:
1/4 cup corn oil
2 tablespoons lime juice
1 tablespoon cider vinegar
1 tablespoon brown sugar
2 pickled jalapeño peppers, stemmed, halved and seeded
1 teaspoon chili powder (or more to taste)
1/4 teaspoon salt
1/2 teaspoon ground cumin
Preparation:
Salad:
Cook rice in salted water as directed on the package. (The rice can be cooked ahead and chilled.)
Combine cooked rice, beans, corn, green onion, and sweet pepper in a large bowl. Toss lightly to mix.
Vinaigrette:
Combine corn oil, lime juice, vinegar, brown sugar, jalapeño pepper, chili powder, cumin and salt in a blender container or food processor bowl. Cover and blend or process until smooth.
Pour dressing over rice mixture; toss to coat. Cover and chill until serving time or up to 2 days. Serve at room temperature.

Corn on the cob of course. I like to grill the corn while I'm grilling the ribs. Shcuk the corn, coat it in butter, add salt & pepper, wrap in foil and place it on the grill.

i like to make something called tamale pie - it's a cornbread cassarole.
potato salad or maybe a bean salad would go nice...
