Hamilton Beach 18 qt Roaster Oven?

I have a Hamilton Beach 18 qt Roaster Oven. I am making a turkey for dinner tonight. I placed the Turkey in it with butter and salt pepper onion and garlic. I also placed about 4 cups of water in the bottom of the roaster we will not be making gravy we have jarred gravy because my father in law loves it. My question is: Do you think that its to much water? Is is not enough water? Did it even need water? My husband said no water was he right. Please let me know what you think I should do. Dinner is at 5pm thanks to everyone for the answers.

Recipe coats chicken in egg and flour and then sautee it but I am making 5 times the recipe and just want to bake it in the oven. Will it be the same consistency and taste the same? How long should I cook the chicken for? They are the thin, boneless chicken breast - about 4 1/2 ounds worth, 3 trays.

I'm not a fan of wine in general, and I just tried Sutter Home White Zinfandel and it tastes like vinegar. I'm looking for a white wine that doesn't have a vinegary flavor, maybe something sweet without an after taste. Any ideas and price per bottle?

I've been delving into the world of vegan baking and I noticed that it calls for soy milk in alot of recipes. Problem is, I'm allergic to soy milk. I can have other soy products, just not soy milk at all.

Could I replace the soy milk in recipes with stuff like rice milk or almond milk? And would I use the same amount as it calls for in the recipe when using soy milk?

I made some gluten free cookies yesterday and although they taste nice, they're quite dry and leave a kind of powdery taste in your mouth. What should I change about the recipe to give them a better texture? More butter? More egg???

I have been searching for something like this for absolutely ages,,, never knew it actually existed and had a name!! Ive seen all the various vegetarian options in the shops and as my daughter is vegetarian it is of extra interest to provide her with a varied and well balanced diet. So while there is quite a selection to be bought, I am always wary of many of these products, because, while they may be "vegetarian" in the sense they contain no meat, they are still processed foodstuffs. Too often I see a great list of e-numbered additives, which in my mind, detracts from the basic product and makes me question if in the end they are a healthy alternative at all. Now I have all these brilliant recipes on how to make it myself, how to cook it and all sorts of other interesting tips.
My question/s is/are (sorry, I know I get "wordy") Once I have made a batch of seitan, how long does it keep? What is the best way to store it? Can it be frozen, cooked or uncooked? Thanx in advance any replies
