For most cookies butter will work but they'll spread more. If your recipe calls for Crisco AND about a tablespoon of water, eliminate the water.
Crisco will make a higher cookie and will generally be more crisp.

Best substitute for Crisco =>> Lard
As it imparts minimal taste, and makes a light, flakey baked good.
Both great for pie crusts, biscuits, etc.
Also acceptable -- but imparting some taste:
Butter
Margarine
Great for cookies, cakes, etc.
It is best to use the latter 2 in their unsalted variety, however, if all you have is the salted variety, it will also work -- just slightly decrease salt in the recipe.
