I've been delving into the world of vegan baking and I noticed that it calls for soy milk in alot of recipes. Problem is, I'm allergic to soy milk. I can have other soy products, just not soy milk at all.

Could I replace the soy milk in recipes with stuff like rice milk or almond milk? And would I use the same amount as it calls for in the recipe when using soy milk?

I'm sure you could...they all (soy, rice, almond) are, in the end, replacements for regular old cows milk. I'm sure substituting for one of these would be fine. How does rice and almond milk taste? I've tried soy and one word comes to mind...YUK! I don't know why...I just could not stomach it.

For those of us that do drink and cook with milk and still want to use milk, but cannot tolerate the lactose, I am always amazed at the places and people who don't thnk to use lactose-free milk. I cannot tolerate soy, either and yes, I do use almond milk on cereal or just to enjoy as a drink, but for cooking and baking I do personally prefer milk and I am SO happy that lactose-free milk is available. It tastes great and having Crohn's, I have no distress when drinking this form of milk. I wish places like Starbuck's etc. would carry lactose-free milk instead of soy, or in addition to soy because there are many of us that are allergic to soy.

rice milk or almond milk...should be the same..

Cow's milk? In some places they actually use it. Honestly.
