The sauce served with Samosas is called "tamarind chutney." A local Indian chef showed me how to make it, but it is time consuming. You have to keep cooking (by boiling) down the tamarind and pressing them through a sieve separate out the pulp. Once you have removed all the pulp, you blend the juice with seasonings such as cumin, red pepper, and garam masala and simmer it to enhance the flavor. I lost the exact recipe when I moved :-(
And I have to say, that I just buy it at Indian grocery stores, even though Mel's is so much better.

There are many different versions of samosa. I'm Afghan, and the version we make is called sambosa and it isn't served w/ any kind of sauce. Basically its a pastry-like dough filled with a meat filling. The hardest part is, of course, the dough which is prepared similarly to a croissant dough, only that it is folded differently and filled. The filling consists of ground meat (usually lamb, "buz" or "gosfand") and chopped onions and spiced with salt, pepper, and sometimes cinammon or paprika. The spice depends on regional variation and the cook who makes it. Sometimes people add additional ingredients to the filling, like potatoes or nuts. The kind my family makes just has meat in it. Then it is baked in a really hot oven (approx. 400 degrees). Sambosa can be eaten hot or cold and is sometimes served with sugar as a condiment. Therefore it can be considered as a dessert. I've never made sambosa all by myself, and no one in my family measures out ingredients when they cook, so its kinda impossible for me to write a recipe. :( sorry
You should also try other central asian foods such as palau, sabzi chalau, bulani, ashak, tushpera, mantu, laghman/ ashburida, shurbah, sheerbirinj (rice porridge), kurme (or korma) koftah, kurme kadu, firni (I think there's a French version called blanc mange), mosti khiar and dogh.

U can eat samosas with many types of chutnis or sauces.
One is tamarind chutni made with dates and tamarind.
Another is green chutni made with grinding corriander/cilantro, mint leaves together with coconut grated salt and green peppers into a thick paste. Add water to make it thinner or add thismixture, 2/3 tbsp to a cup of yoghurt and u get yet another kind of chutni.
Now filling is another story.
U can fill samosa skins or coverings with a mince mixture, made with chicken/ mutton or beef. Just fry mince meat with salt and pepper. add garlic and ginger too.
Or with a potato filling. Mash the boiled potatoes and fry thismixture in oil. add seasonings.
Yet another filling is sweet............ yes. ......sweet.
Made with ground coconut, sugar, and nuts.
Yummmmmm.......

and i love samosa's...the sauce is amazing and i also like it with the green sauce that has cilantro in it. i really need to learn the names of the stuff i eat. :P
