I want to see an Irish restaurant. (Don't say there are bars everywhere already, lol)
I am irish, and I married an italian, and I feel like I can't introduce my children to my culture the same way they're introduced to my husbands b/c they are bombarded with it everywhere. I cook my own sauce, there are all these italian dishes, etc.
I would be nice for me to be able to introduce them to some irish dishes, but i don't know of any, so I want an irish restaurant.

One supper club we used to frequent did something novel. I've wondered if this would work for a restaurant, on a continuing basis, instead of a fixed menu.
Besides ordering the regular menu items, you could ask "What's on the stove?" The owner and head chef would experiment with new dishes almost daily. Sometimes it was only a variation of a menu item, sometimes it was totally new and unexpected. They only stocked enough for 8 to 12 dinners, so if you got there too late it was often gone. It was like dropping in at a friend's and taking 'pot luck' for dinner. The food was always delicious, and reasonably priced, since they only charged the average cost of a dinner.
The diners provided immediate feedback, which determined if something was added to the "specials" rotation. There were even times, while having after-dinner drinks at the bar, the diners would lobby the owner to have a certain dish on the menu for their next visit. He was unusually accomodating with these requests.

Try a Classic Buffet with some down home Country cooking.
Pork Roast, Mashed potatoes, Green Beans, Mac & Cheese, Cornbread, Biscuits (from scratch), Collards, Okra, Squash, Carrots, Fried Chicken, Country Fried Steak, Rice, etc....
Or try hamburgers, cooked as you like, only put the toppings out on buffet & let them fix their own. Hot Dogs, fries, Potatoe wedges, etc,....and put all the toppings out buffet style and let the good times roll. Put mini jukeboxes in each booth. Do it up 50's style with a 21st century twist.

A small but well thought out international menu in the
appetizers, along with your specialties. I always see the
same old appetizer choices but never a variety from
different countries. Also, I have never seen a wide
selection of ice-cream with various toppings for dessert
outside of an ice-cream shop. I'd go back just for this.

A restaurant that served food for people with special diet needs. i.e. diabetes, kidney disease, etc.. These people rarely get to enjoy a meal out.
