Baked Rigatoni with Sausage & Mushrooms
Serves 8–10

2 TB extra-virgin olive oil, divided
2 TB garlic, minced
1 cup yellow onion, small diced
11/2 lbs white mushrooms, quartered
1/2 cup red wine
pinch crushed red pepper (optional)
2 lbs Italian sausage, cut into small, bite-sized pieces
1 lb frozen spinach, defrosted and squeezed dry
1 lb ricotta cheese
1 egg
1/2 cup parmigiana-reggiano cheese, grated
2 tsp salt
1/2 tsp ground black pepper
1 lb rigatoni pasta
2 jars (26 oz each) prepared marinara sauce
1/2 lb mozzarella, shredded

Heat one tablespoon of the olive oil in a sauté pan. Add the garlic, onions and mushrooms and sauté until the mushrooms have released most of their liquid and the onions are translucent. Add the red wine and crushed red pepper and continue to cook until the red wine has evaporated. Remove from the pan and set aside.

Add the remaining tablespoon of olive oil to the same pan and add the sausage. Cook until the sausage is fully cooked and browned. Remove from the pan and add to the mushroom mixture.

In a large bowl, combine the spinach, ricotta cheese, egg, parmigiana-reggiano cheese, salt and black pepper and mix well. Add the mushrooms and sausage to this mixture.

Meanwhile, cook the pasta in rapidly boiling water until al dente and drain. Add the cooked pasta and marinara sauce to the ricotta mixture and mix well until fully combined. Transfer to a roasting pan and top with the mozzarella cheese. Cover with aluminum foil and bake in a 350 F oven for approximately 30 minutes. Remove the foil and continue to bake until browned on top and fully heated through.

I would cut up the sausage into bite size pieces and saute in enough olive oil to prevent sticking. While I was doing this I would oven roast some veggies...carrots, onions, green pepper, celery. All would be nice here. A little olive oil, salt, and pepper on a baking sheet at 375 till tender.

Boil up your noodles and reserve. In the same pot you can add about a 1/2 stick of butter and about a 1/2 tbs. of dried thyme leaves. Let the butter go on medium high until it has browned. This is a simple brown butter sauce. Bring everything together by tossing your noodles, veggies, and sausage in the pot with the brown butter. Its one pot and fairly simple to make with very few ingredients. Enjoy.

depends on the sausage..I normally use the Italian mild sausage links...not the breakfast kinds, the ones like bratwurst.
bake it in the oven at 400 and brown them on broiler pan for at least 15 on each side. 30 minutes total. Then slice up the sausage.
Boil some spaghetti noddles...any kind you like and
Then get a 2 jars of White Alfredo sauce to warm up
pour on the spaghetti noodles and top with slice sausage.
There..instant meal of Italian! Don't forget the salad and toasty garlic bread! =)

I say boil the sausage and boil the noodles. Chop the sausage up and put it in the noodles. It would be better if you had some sauce to mix in.

cook noodles, drain well... brown & caramelize cut-up sausage. Sprinkle a TINY BIT of brown sugar on noodles, mix in sausage. If you can saute cabbage with the sausage to mix in, even better. Serve mustard on side to dip sausage. TaDaaa!

depends on what kind of sausage you have! but I would boil the sausage in a skillet only put water enough to cover sausage half way turning over occasionally,let all water evaporate and continue cooking till nicely browned.
cook noodles with plenty of water and salt till tender.drain,add butter, black pepper,garlic pwder and parmasan cheese if you have it,can't go wrong with this!

Sweet and Sour Pork with Almonds & Singapore Noodles
(If you want you can add sausages except pork )
Ready to eat in 25 minutes

350g Fantastic Fresh Singapore Noodles
4 tablespoons vegetable oil
½ cup whole blanched almonds
400g lean pork fillet, thinly sliced
1 large onion, cut into 6 thin wedges
1 large red capsicum, seeds removed, cut into 2.5cm squares
1 bunch broccolini, cut into 4cm lengths, stalks separated
150g snow peas, trimmed, cut in half diagonally
400g jar Fantastic Stir through Sweet & Sour Noodle Sauce


Pour boiling water over noodles, and leave for 1-2 minutes before separating with a fork. Drain set aside.

Heat a wok until hot, add 3 tablespoons oil and almonds stir-fry constantly until golden. Remove with a slotted spoon, drain on paper towel.

Reheat wok, stir-fry pork over high heat 1-2 minutes. Remove, set aside.

Wipe out wok, reheat until very hot. Add remaining oil, onions, capsicum and broccolini stalks, stir-fry 1 minute.

Add broccolini tops and snow peas, stir fry with 2 tablespoons water for a few seconds, cover, cook about 1 minute to steam vegetables. Add sauce, stir until simmering.

Return pork. Add noodles in 2 batches, tossing with 2 spoons until coated with sauce and heated through. Serve onto plates or bowls, and scatter over almonds.
