I have a Hamilton Beach 18 qt Roaster Oven. I am making a turkey for dinner tonight. I placed the Turkey in it with butter and salt pepper onion and garlic. I also placed about 4 cups of water in the bottom of the roaster we will not be making gravy we have jarred gravy because my father in law loves it. My question is: Do you think that its to much water? Is is not enough water? Did it even need water? My husband said no water was he right. Please let me know what you think I should do. Dinner is at 5pm thanks to everyone for the answers.

Quick Roast Turkey
Recipes For: Roaster Ovens Recipe Type: Meals
Yield: 6-8 Servings
14-15 pound turkey, fresh or totally thawed
1 onion, peeled and cut in half
1 stalk celery
Salt and pepper
The roaster oven cooks a turkey in half the time of a regular oven, but use a meat thermometer to make sure your turkey is thoroughly cooked. The roaster oven does NOT brown a turkey. The constant dripping of condensation from the cover of the roaster oven prevents the turkey from browning. Use the roaster oven if you plan to serve the turkey sliced, rather than presenting the whole turkey at the dinner table.
Remove the rack. Pour 1/2 cup water into the insert pan, cover and preheat to 325 degrees.
Remove giblets and neck from cavities of turkey. Set aside and use for giblet gravy. Rinse bird inside and out with cold water.
Place onion and celery inside turkey. Rub outside with salt and pepper. Place on rack. Brush whole turkey with butter.
Place in roaster and cook 1&1/2 to 2 hours. Check meat thermometer reading. Turkey is done when thermometer registers 180 degrees.
Always thaw a frozen turkey in the refrigerator, not at room temperature. A 12-15 pound frozen turkey will take 2-3 days to thaw in the refrigerator. If pressed for time, this size turkey can be thawed in cold water in 6-9 hours. Be sure to change the water often.
Hope this helps..

You don't really need the water in a roaster oven - it tends to kind of steam anyway since it's smaller than a regular oven. It won't hurt the turkey, however the skin might not crisp as much as without the water. You can take it out for the last 1/2 to hour of cooking and put in the regular oven to get the skin crispier if you like.

Hope it all turns out great!
