Why is it the most expensive and favorite cut of meat?

It is the loin and it's expensive because it's the most tender and some say flavorful cut of steak. It's tender because it's a muscle that rarely gets used that is around the lower spine of the cow.

Filet mignon means "cute steak" in French. It is a steak wrapped in bacon. It is cut from the same part as the T-Bone steak. It is the most expensive because it cooks very nicely and stays tender (even without the bacon but that helps a lot too).

Filet Mignon is cut from the tenderloin. The extra prep of wrapping the bacon around it adds unreasonably to the price. If cooked correctly the tenderloin almost melts in your mouth.
