I just don't understand why some people think its ok to leave a crappy tip when they recieved good service...crappy service ok...but when I've gone above and beyond for a guest and they go as far as telling me how great the service was then when I pick up the tip which really for above and beyond service should be about 20% and it's maybe 10% it frustrates me...so I want to understand what the average person is thinking when they're tipping

In the south, there are hardly any chicago-style deep-dish pizzerias, so I thought it would be unique to open one. But chicago style can also be the least healthy, with all the cheese and meats and whatnot. Would it be smarter to open a restaurant serving something uniquely delicious but extremely indulgent, or something lighter and tasty, like thin-crust pizza?
