In the south, there are hardly any chicago-style deep-dish pizzerias, so I thought it would be unique to open one. But chicago style can also be the least healthy, with all the cheese and meats and whatnot. Would it be smarter to open a restaurant serving something uniquely delicious but extremely indulgent, or something lighter and tasty, like thin-crust pizza?

in the south i highly doubt that people are caring about if the pizza is healthy or on the south beach diet or whatever....as long as the pizza is good it will sell

Thin or deep dish pizza isn't that healthy unless you made it with whole grain and fat free cheese. I think that if you promoted it well a chicago style pizza shop could do well.

I like Pizza and haven't found to many Pizzeria's that I didn't like. Love doing New York city and stopping by all the little places that serve it by the slice. If its pizza, I'll eat it, I'm easy!

in atlanta, there's actually a very good chicago-style pizzeria off of ponce called Nancy's. it does pretty good business not because they sell chicago-style pizza but because it's some tasty pie. and that's the key-make a good pizza and people will come. i personally like fellini's and mojo's (2 local, independently owned pizzeria) because of the quality and atmosphere of the pizzeria.

there are actually a few very good pizza places in the south (at least near atlanta) but I do agree that there are few chicago style. I think if you made a quality pizza your shop will be full.
