First the facts:
The oil is new, Castrol 10W-40--just changed. The oil filter is new as well, and the correct filter was used. The oil level was checked, and it registers right on the full level line on the dipstick.
When the engine is started, it runs smoothly and quietly. It could sit there for an hour, just idling, and it would continue to run smoothly and with no problems. Idling is good. Idling is happy!
Then, when you get behind the wheel and take it out on the road, a strange thing happens. After about a mile or so, the oil light comes on and the engine begins to get a little weird sounding. No knocking, just not running quite as smoothly anymore. When you pull over and let the car sit for a few hours, you can start it up again, and resume the endless loop of circumstances that began in the previous paragraph.
