...or other drinks like that which have no added sugar? How come these drinks can have no grams of sugar/fat/protein but still have calories?

I have this recipe for an asian crepe which is as follows...

2 cups crepe mix (which is 6:1 ratio RICE flour:cornstarch)
1 cup water
1/4 cup beer
1/4 tsp of baking powder.

Rest it for an hour and cook on hot skillet.

So my questions...
What do the cornstarch, baking powder, and beer contribute to the crepe?

I've been having trouble making it crispy too, any suggestions?

Does walmart carry ginkgo tea, if not, what stores do? I need to know if stores like foodlion, or walgreens pharmacy do, because I live in a small town and don't really have any other options besides that, so please don't say wholes food, or something of the sort. Thank you.

I am unsure how to tell if nuts are not fresh, or even if they are what people call 'rancid'. Is there a difference in color? taste? smell? Could someone please explain this to me? I also would like to know the best way to store nuts and how long do they last? Thanks!
