I've done this a few times in the last weeks cuz I kept forgetting to buy brown sugar. Just use white and for every cup of sugar add 1 tbsp of molasses. Works great. In fact I think I liked my cookies better that way than I did with the brown sugar.

Use an equal amount of white sugar as the recipe calls for brown, and add about ½ tsp. of molasses for the colo rand flavor of brown sugar.

You can just use white sugar and there will be a taste difference (not as rich) but it should still work fine.
