Just started a new job, and Im hearing that there will be a potluck comming up. I don't do a lot of cooking so I guess Im looking for a simple recipe that will Rock the Potluck.

ZUCCHINI WITH SOUR CREAM

8 med. size zucchini
1 c. sour cream
1/2 c. grated Parmesan cheese
1/4 tsp. salt
Dash Tabasco
1 c. grated Cheddar cheese

1. Allow 1 zucchini per person. Parboil zucchini whole in boiling water for 5 minutes, turning once or twice. D rain.
2. Cut a thin shallow, oval shaped slice from side of zucchini. Using small spoon, gently hollow out, making a small "boat".

3. Chop zucchini pulp and mix with sour cream and Parmesan cheese. Stir in salt and Tabasco.

4. Using sour cream mixture to fill zucchini "boats", arrange side by side in shallow baking dish. Sprinkle grated Cheddar cheese over filled zucchini "boats".

5. Broil about 4 inches from heating element, about 3 to 5 minutes or until cheese melts and top is golden. Makes 8 servings.

I agree with WatsUp.....I have often asked KFC to fix a batch of coleslaw for a potluck dinner. It is always a hit.
(if anyone asks, I tell them it is KFC's)

Seven layer Christmas bars are soooo good and always a hit. Here is the recipe (this can be frozen):

SEVEN LAYER COOKIES

1 stick butter
1 1/2 cups graham crackers
1 can Eagle brand sweetened condensed milk
1 cup semi-sweet chocolate chips
1 1/2 cups coconut
1 cup chopped walnuts
1 cup butterscotch chips (can be omitted)

Melt butter in a cake pan. Sprinkle crumbs over butter and pour Eagle brand condensed milk over the crumbs. Top with remaining ingredients in the order given and press down firmly.
Bake 25 minutes or until lightly brown at 350 degrees.

How about a bbq brisket? Brisket is cheap meat and if you marinate for 12 hours in a good bbq sauce and then cook really low for 8-10 hours it falls apart and is so yummy take some hamburger buns or thick sliced bread and you will be the hero of the night!

ok this is easy soup and dont take long to make zuppa tuscany soup here is how i make it its better then olive gardens.

3 potatoes dicedand peeled.
kale as much as u like
a onion diced
half lb bacon or bacon bits work too
mild or itailon sausage 4 or five cooked and sliced up
minced garlic about 5 -6 tablespoons
chicken base as much as u like for taste
and whipping cream usually a whole pint or more depending on how much u make
after everything is prepped and cooked mix all together and let simmer till it is creamy then serve with bread sticks. mmmm so good

I make this for home or double for taking to potluck...it is easy and good....men particually seem to like it...

Burrito Supreme Casserole recipe

8 (8-inch) flour tortillas
1 1/2 cups tomato juice
1 envelope taco seasoning mix
1 tablespoon vegetable oil
1/2 pound ground beef
1 (16 ounce) can refried beans
3 cups shredded Cheddar cheese, divided
1 small avocado
1 tablespoon lemon juice
1 1/2 cups shredded lettuce
1 cup chopped tomato

Wrap tortillas securely in aluminum foil; bake at 350 degrees F for 15 minutes or until thoroughly heated. Combine tomato juice, seasoning mix and oil; stir well, and set aside. Cook ground beef in a large skillet until browned, stirring to crumble; drain. Stir in beans and 1/2 cup tomato juice mixture. Bring to a boil; cover, reduce heat, and simmer 5 minutes or until mixture is thoroughly heated, stirring occasionally.

Remove from heat. Place 1/4 cup beef mixture and 2 1/2 tablespoons cheese down center of each tortilla. Roll up tortillas, and place seam side down in a lightly greased 13 x 9-inch baking dish.

Pour remaining tomato juice mixture over casserole. Cover and bake at 350 degrees F for 30 to 35 minutes.

Uncover and sprinkle with remaining cheese; bake an additional 5 minutes or until cheese melts.

Peel and cube avocado; toss with lemon juice. Sprinkle avocado, lettuce and tomato over casserole. Serve immediately.

Take the dessert..this cookies are really good....and easy to make..

Big Mama's Tea Cakes recipe

1 cup butter or margarine
1 1/4 cups granulated sugar
1 teaspoon vanilla extract
2 eggs
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons buttermilk
Sugar

Beat butter or margarine in a large mixer bowl for 30 seconds. Add the 1 1/4 cups sugar and vanilla extract; beat until fluffy. Add eggs; beat well.

Stir together flour, baking soda and salt in a mixing bowl. Add to beaten mixture alternately with buttermilk. Drop by large rounded tablespoons onto a greased baking sheet. Sprinkle with sugar. Bake at 350 degrees F for 10 to 12 minutes or until lightly browned on the edges.

Cut up chicken breasts...then some mozzarella cheese(shredded), then a box of Stove Top (just dump the box in), and some cream of mushroom soup. Put a little more cheese on top. You can transport in a crockpot. And heat it up again. Just as good.

Office potlucks are pretty cool. And, since you have one coming up, it's either dedicated to the holidays in general or to Thanksgiving. Here are some ideas to get the season rolling:

1. Cheese platter with Manchenga, Fontina, Brie with Mushroom, Cambozola. Serve with artisan crackers and crisp green globe grapes.
2. Hot Artichoke and Crab Dip: 2 cans artichoke hearts drained and chopped, 1 can diced green chilis, 1 cup mayonaise, 2 cups shredded parmesan cheese, 1 tsp hot sauce, 1 tsp lemon juice, 1 cup crab meat, 1/2 tsp garlic powder. Mix and bake at 350 degrees until bubbing and golden. Serve with sliced baguette or blue corn tortilla chips.
3. Antipasti Platter: slices of sopressata, cappicola, peppered salami, provolone cheese, pepperoncini, green onion, and marinated mushrooms, artichoke hearts, olives.
4. Peppered salami rollups: spread slices of peppered salami with cream cheese and wrap around a small cornichon, secure with toothpick.
5. Banana Candied Walnut Cake: to your favorite box yellow cake mix, add 3 ripe bananas. Pour half of the mixture into a prepared bundt pan and sprinkle with candied walnuts. Top with remaining batter and sprinkle with candied walnuts. Bake according to directions and let cool. Invert on serving platter. Prepare a cream cheese glaze or heat up prepared cream cheese frosting until it is easily spooned over cake.
6. Easy lasagne: 1 box lasagne noodles, 1 small package Velveeta, 1 package shredded Italian cheese, 2 lbs hot turkey italian sausage (casings removed), 1 28 oz can tomato sauce, 1/2 cup olive oil, 3 T dried Italian herbs, 1 tsp fresh ground pepper, 1/2 onion, diced. Saute sausage and onion until done. Drain. Add tomato sauce, spices and olive oil. Simmer 15 minutes. Boil 12 lasagne noodles until al dente and drain. Layer a little sauce, noodles, sliced velveeta and 1/3 of the shredded Italian cheese. Repeat ending with sauce and cheese. Bake at 350 degrees for 45 minutes.

My old stand-by is 5-bean salad.
Mix in a large bowl, a can each of 5 different kinds of beans:
Red Kidney, Chick Peas, Pinto, Black Beans, Lima Beans.
or any colourful; combination you like; drained & rinsed.
Pour over them a bottle of vinaigrette style salad dressing:
Italian, Russian, Catalina, etc. whatever you like.
Mix beans to thoroughly coat & marinate 2-4 hours in frig.
Transfer with slotted spoon to serving bowl, to drain.

My chicken and stuffing hotdish always does the trick!

Take two cans of chicken, drain and dump into the bottom of a cakepan, use hands and crumble. Take twoo boxes of chicken flavored stuffing and prepare them, puoring over chicken when done. Than, take two cans of cream of chicken soup, puor over top. Cook for 20 minutes at 350.
