GREEK SALAD

1/2 red onion
1 cucumber
1/2 package of Feta cheese
1 tomato
1 and 1/2 package of mixed Italian salad greens
3 teaspoon of olive oil

Slice the onion horizontally; separate the slices and place into a bowl with the Italian salad greens. Peel and slice cucumber into coins and seed and wedge the tomato. Crumble cheese. Mix all ingredients and slightly drizzle with olive oil.

Greek Salad

2 Tbs. Greek OR Italian Seasoning
2 Tbs. fresh lemon juice
2 Tbs. white wine vinegar
1/2 C. olive oil
1/4 C. crumbled feta cheese
1 head romaine lettuce (or 8 C. mixed salad greens)
1 medium cucumber, peeled, halved, seeded and sliced
1/2 C. kalamata or black pitted olives, sliced
1 C. cherry tomatoes, cut in half
1/2 medium red onion, cut into rings

Blend together seasoning, lemon juice, vinegar and oil in a bowl. Gently stir in cheese. Refrigerate 15 minutes or longer. Meanwhile, wash, dry and tear lettuce or salad greens into bite-size pieces. Place lettuce and vegetables in a large bowl. Just before serving, stir dressingpour over salad. Toss to coat. Garnish with onion slices and extra feta cheese, if desired.

Greek Salad

1 head romaine lettuce- rinsed, dried and chopped
1 red onion, thinly sliced
1 (6 ounce) can pitted black olives
1 green bell pepper, chopped
1 red bell pepper, chopped
2 large tomatoes, chopped
1 cucumber, sliced
1 cup crumbled feta cheese
6 tablespoons olive oil
1 teaspoon dried oregano
1 lemon, juiced
ground black pepper to taste

In a large salad bowl, combine the Romaine, onion, olives, bell peppers, tomatoes, cucumber and cheese.
Whisk together the olive oil, oregano, lemon juice and black pepper. Pour dressing over salad, toss and serve.

this is my twist on a traditional greek salad:

Oak lear lettuce both red and green, cos lettuce, tomato (pref ROMA) red "pepper" or capsicum depending on where you live, garlic fetta, baby spinach, rocket, cucumber

Pull enough leaves off the lettuces that you think you may need, wash and slice into 2inch squares, layer on the bottom of a large bowl, dice the tomato, thinly slice the pepper or capsicum, wash the rocket and baby spinach and place in bowl with the lettuce, pepper and tomato crumble the garlic fetta over the top and decorate around edges with cucumber.
(you can also add some diced pineapple for sweetness)
salt and pepper to taste

DRESSING:
1-3 cloves of garlic, balsamic vinegar, olive oil:

in a bowl or small jug place the crushed garlic, 1/2 cup balsamic vinegar, and 1Table spoon of olive oil and beat with a whisk or fork untill combined, drizzle over salad and serve.

Alternative leave jug or bowl next to salad for diners to drizzle if wanted
