Can I use more coffee and soak/ brew it for a shorter time?

Why? I don't like 'long soaks', because of the sour after taste.

Get what I mean?

Your personal experiences with coffee (ground coffee) would be appreciated.

(Note: I like the taste of fine coffee brewed with cloth filters. However, I am trying to get the same taste using the French Press, but that is very difficult).

I left some ground sirloin out to defrost and then had a longer day than I anticipated...?

It was out from 7am until 9pm, then i put it in the fridge because it was too late to make dinner. It doesn't smell bad... Can I still use it? i plan on pan frying it. What could happen if it's bad? I'm on a limited budget so please be reasonable with your answers, afterall, I have used meat that has been left out to defrost for fairly long periods... Anyone have any experiences like this???

Hot sauce anyone?

how much do servers tip the itamae?

i just started working as a server at a restaurant that sells korean food
and has a sushi bar. from what i was told, everytime i sell sushi, i
must give 10% of the sushi bill to the itamae.

for example, if i had a lot of sushi orders, and it came to $100, i
would give $10 to the itamae. but what if the customer tipped me 15% on a $100 bill consisting of sushi items?
that comes to $15. that means i would have $5 for myself, but the itamae would
have $10.

is that normal etiquette?

is that how other sushi places do this?

Food safety: Previously opened yoghurt, partly eaten, recovered, and left out some hours. Safe for tomorrow?

It was a large container with lots left in it. Is it still safe to eat? Or should I dump it and not take the risk? I usually have some with breakfast and refrigerate the unuused portion, but his morning I was distracted and forgot. Should I just buy another?

Why don't you own a microwave oven?

Recently, I moved from a place that had a microwave to a place that dosen't. All my friends suggested I should get one, but I value my counter space and rarely ever used the one I had before. I guess I don't mind waiting for my food to heat in the oven or popping pop corn on the stove. When friends come over for movie night, they know better than to bring microwave pop corn now! :)

Anyway, what's your reason/excuse/purpose for not having a microwave?
