Coconut Chutney - North Indian

3 tbsp. coconut, shredded
1 inch fresh ginger, chopped
1 fresh green chili
1/2 bunch cilantro with stems and root removed
fresh lemon juice
salt to taste
Method:
In a food processor or blender add all ingredients into a pesto like sauce.

Coconut Chutney (South Indian )

1 cup fresh coconut, shredded
1/2 cup Toor dal dry
1/4 cup Urad dal dry
1/4 cup Channa dal dry
1/4 tsp.tamarind concentrate
1/4 tsp. asafetida
Whole red chilies as per taste upto 3
Salt to taste
2 tsp. cooking oil
Method:
Dry roast toor dhal,chana dhal,urad dhal,red chilies and asafetida in cooking oil. Grind this mixture in water into a thick paste. Add coconut, tamarind and salt and grind it for a few more seconds until all the mixture blends into a smooth paste. Serve with steamed rice or can be served with dosa (rice pancakes).

Tamarind Chutney

1 cup cleaned tamarind
1/2 cup dates deseeded
1/4 cup sugar
2 cups water
1/2 tsp. red chili powder
1/2 crushed cumin seeds
1 tsp. salt
3/4 cup jaggery
Method:
Wash the tamarind clean.Place the tamarind, jaggery, sugar, dates and water in a deep boiling pan.Soak for a few minutes. Put to boil for about 7-8 minutes.Cool to room temperature. Blend in a electric blender till smooth.Strain and transfer to the pan again. Boil till thick enough to coat the back of a spoon thinly.
Add the seasoning. Cool again. Store in clean airtight bottles and refrigerate.

Tomato Chutney

2 Tbsp. Ghee
1/4 tsp. red chilies
1 tsp. cumin seeds
1 inch ginger minced or pounded in a mortar and pestle
1 inch of cinnamon stick
2 cups coarsely fresh ripe tomatoes
3 Tbsp. jaggery or brown sugar
Salt to taste

Heat ghee in a large sauce pan over moderate heat. Add the cumin seeds and let sizzle and brown. Add red chilies, ginger and stir fry for a moment. Add the other ingredients. Cook on low for about 20 to 35 minutes.

Grind the following ingredients in a mixer
1. Ginger½ inch
2. Garlic1 pod
3. Coconut1 full (without the shell)
4. Green Chillies 2
5. Coriender Leaves 1 cup
6. Salt½ tablespoon
7. Sugar1 teaspoon
8. Lemon Juice½ Table Spoon

The result is a yummy Chutney to eat with Idlis, Chapatis, Bread, for Sandwitches etc

Tomato Chutney recipe

Tomatoes Fresh -6 Nos
Green chillies - 2 nos
Red Chillies (dry) - 2 nos
mustard seeds - 2 tsp
urad dal - 1 tsp
methi seeds - 1 tsp
hing - 2 tsp
salt for taste
brown sugar 1 tsp
coriander seeds 1 tsp
oil 1 tbsp


Method :

In a pan heat the oil and add 1 tsp of mustard seeds ,urad dal, methi, coriander seeds ,hing,
& chilliies. Fry for a minute. Add the tomatoes ,brown sugar& salt.
Fry till all the ingredients gets mixed & tomatoes are well cooked.

Let it cool completely . Grind it to a fine paste.
Do the seasoning with the other tsp of mustard seeds in a tsp of oil.

California Chutney.... and Chutney Wraps

3 large red apples diced/ cored and skinned
2 pears diced / cored
10 diced and pitted - cherries or seedless grapes
3-4 tb chopped nuts (walnut) // -- 1 tsp allspice
1/2 tsp white or black pepper // -- 1/2 tsp vanilla
1/2 onion finely chopped // -- 1 tb cider vinegar
1/4 tsp grated ginger or powdered
2 - 3 tb brown sugar depending on your taste
2 tb butter browned // -- 1/2 cup orange juice
Dash of salt (optional)

Boil walnuts in water for a few min til tender / drain water. Saute onion til transparent with a tiny bit of oil. Then either push to far side of pan to brown the butter or remove onions for a moment. Add in butter to brown and .. then spray rest of pan with Pam oil spray, add remaining ingredients and saute all together til cooked through. If you like a bit spicier, add a little more allspice-sometimes i add a dash of cinnamon as well... and sometimes i leave ginger out completely.

** Also may add a few golden raisins or currents and even some finely diced celery if you like. This is very good with poultry or pork.

** This chutney is great served on my favorite :
'Chutney Lettuce Wraps' using ground beef- pan fried finely into small pieces and cooked with a bit more of onion and dash of salt. Using Romaine lettuce leaves, trimmed at bottom, place in about 3TB of the ground beef (not real chunky) into the pocket of leaf & then add a spoonfull of California Chutney spread on top of that. Serve 2 wraps to a plate and the person may gently fold leaf together and eat. These are tasty, healthy, and a big hit. I have served with a buttery rice on the side and fresh slice red pepper.

You could also wrap with a flat bread or tortilla- however add a bit of chopped lettuce inside before wrapping. MMmm good!

coconut chutney
take 1 cup of fresh dessicated coconut. 2 tbspoonfuls of plain edible channa not the whole bean like ones- but broken yellow channa ]you can eat it plain too] . 3 small onions. half an inch of fresh ginger. some fresh coriander . 3 green chillies . and salt to taste . Grind them to a paste with a little water and season the chutney with spluttered. mustard and curry leaves. if it is very hot you can add half a teasp. of lime juice.if edible broken channa is not available you can fry 1 tbspoonful of bengal gram dhal to a golden brown and grind the chutney.dont fry it to a red colour .

Ingredients:
1 onion, skinned and finely chopped
1 lb. (450g) sultanas
1 lb. (450g) apples, cut small
1 lb. (450g) tomatoes, skinned and chopped
1 pint (570ml) vinegar
half a teaspoon of ground ginger
half a teaspoon of pepper
1lb. (450g) Demarara sugar
Cooking Instructions:
Boil the Demarara sugar in the vinegar until dissolved
Add the other ingredients and simmer gently for about 1 hour or until mixture is turned to pulp
Spoon into clean, hot jars then seal and label

1. first required amt of green chillies.
2. groove the coconut and take req amt of it.
3. take some broken groundnuts , req salt, three small onions and mix all these things in the mixer
4. finally put some fried cardamom.
