Preferences on the amounts of each ingredient varies according to taste and region. I usually blend my own but stick with the "standard" seasonings of Oregano, Basil, Rosemary, Thyme, Sage and Marjoram.
I usually use onion/garlic in the saute process... Maybe add a bit more as the meal cooks for a stronger flavor (again according to preference) added with some parsely and fresh ground pepper.

Garlic, onion, basil, parsley. You can find those four in almost every Italian dish. Oregano is primarily used by those cooking southern Italian food - dishes heavy on the tomato sauce, sausage, etc..

Garlic, onion, basil, and oregano are my basics for Italian.
Savory, rosemary, and thyme go well with them if you want to get more creative.

basil, oregano, tarragon, rosemary are all used in Italian seasoning. I think paprika is to. (If not, it should be, I love it!)
