I would make a bechamel sauce (white sauce)and add some lemon juice and a bit off tarragon and dill.MMMMmm.Basic white sauce is equal parts off flour and BUTTER.Melt the butter (SUPERIOR FLAVOUR)and add the flour and cook on low for one minute stirring constantly.Then add milk really slowly and use a spoon for the first part.After it is a liquid switch to a whisk allthe while stirring.The amount off milk needed depends on the type/strenght off the flour.Then when it is add the desired consistancy add lemon juice and tarragonand dill.

The best (and easiest) sauce for salmon that I found has three ingredients in it. I'll warn you it sounds gross, but it is really tasty.

1 part stone ground dijon mustard (with the mustard seeds still in there)
1 part Miracle Whip (yes, Miracle Whip - not mayo)
Tarragon to taste.
Mix together

Put the sauce on the salmon fillet and when you see the whites of everyone's eyes, put the salmon under the broiler. In a few minutes the salmon will be done and the sauce will have caramelized. Very tasty. Serve extra sauce on the side and keep your secret recipe a secret.


For something more elegant you can use this sauce to make a 'Salmon Wellington.' Get on of the ready to go pie crusts from the store and trim it so it will cover your fillet. Cover the salmon with the sauce and lay the pie crust over top. Brush with egg to get a nice shine. Bake at 350. By the time the crust is golden brown the salmon will be done. Works with large fillets as well as individual portions.

Well I remember eating something my cousin's boyfriend made. He put Campbells cream of mushroom and some vinegar (stirred together in a pot first) on top of salmon. It had a tangy taste and it was very good.
